Another quick, easy, super simple recipe that my family just loves is Chicken Salad with Apples and Dried Cranberries. It’s the perfect blend of a delicious chicken salad with a little bit of tart from the Granny Smith apples, sweet from the dried cranberries, and pure deliciousness from the tender bites of chicken.

A simple recipe for my favorite chicken salad will pull you through on any number of weekdays for lunches, hectic weeknights for supper, or even when entertaining!

Using my slow cooker chicken method, I can have this chicken salad whipped up in about 5 minutes.

Now, I don’t know about you, but having a homemade lunch or supper on the table in about 5 minutes surely deserves a medal of some sort.

I have another little trick to share with you about this chicken salad, too. It makes a mighty popular salad to serve at a ladies luncheon. Just increase the quantities in the recipe for the number of people you’ll be serving.

A delicious, yet simple recipe for chicken salad with apples and dried cranberries

Ingredients

  • 4 cooked chicken breasts, chopped
  • 1 Granny Smith apple, chopped
  • 1/ 2 cup dried cranberries
  • 1/2 cup mayonnaise
  • 1/2 teaspoon lemon juice
  • pinch of salt

Instructions

  1. Stir all ingredients together until well-combined.
  2. Serve cold as a salad or as filling for a sandwich or wrap.
  3. Store in an airtight container in the refrigerator.
