Since we’ve been talking about simple recipes using my slow cooker chicken method, I just knew I had to share one of the quickest lunch or supper recipes that we just love – Simple Chicken Nacho Salad

Now, I’m going to go ahead and tell you, this is such a quick and easy recipe and definitely one that you can switch out ingredients to your family’s favorites. You can even pour melted cheese over the top instead of using a shredded cheese. But, since it’s been so hot around here lately, I wanted to go with this cold cheese version.

Here’s how I pull together this amazingly quick, delicious chicken nacho salad, a 10 minute meal.

Simple Chicken Nacho Salad Recipe

Ingredients 

  • 4 chicken breasts, cooked and chopped
  • 2 cups tortilla chips
  • 4 cups lettuce
  • 1 (14.5-ounce) can black beans, rinsed well
  • 2 tomatoes, quartered
  • 2 cups shredded cheese
  • 1/4 cup sour cream
  • 1/2 cup ranch dressing
  • 3 tablespoons salsa

Instructions 

  • Assemble ingredients for salad. Top with shredded cheese, sour cream and then dressing.
  • To make dressing, mix together ranch dressing and salsa.
