These simple blackberry tartlets make the perfect and elegant addition to any shower, brunch or special occasion like a fun summer party or such.

Blackberry tartlets are also as easy as can be to make. You simply use a pre-made phyllo shell, a bit of homemade blackberry curd, a dollop of whipped topping, and then keep them chilled until you are ready to serve.

You can easily substitute the blackberry for another berry such as raspberry, strawberry, or maybe even a blueberry. An assorted tray of a few of those would be pretty sweet, too I think.

Blackberry Tartlets Recipe

Ingredients 

  • 2 (12-ounce packages) (672 g) frozen blackberries, , thawed
  • 1/2 cup (99 g) sugar
  • 1/3 cup (83 g) fresh orange juice
  • 1/8 teaspoon (0.4 g) kosher salt
  • 2 tablespoons (20 g) cornstarch
  • 2 tablespoons (28 g) water
  • 1 1/2 tablespoons (21 g) butter
  • 1/2 teaspoon (2 g) vanilla extract
  • 30 (510 g) frozen miniature phyllo shells, thawed
  • 1 1/4 cups (80 g) frozen fat-free whipped topping, thawed
  • 30 (195 g) fresh blackberries

Instructions 

  • Combine first 4 ingredients in a large saucepan.
  • Bring to a boil; reduce heat, and simmer uncovered for 5 minutes.
  • Strain berry mixture through sieve. Discard solids.
  • Pour berry juice back into saucepan.
  • Combine cornstarch and water.
  • Pour into berry mixture.
  • Bring to a boil over medium-high heat, stirring constantly. Cook 1 minute.
  • Remove from heat and add butter and vanilla. Cool slightly.
  • Spoon 2 teaspoons of berry mixture into each shell.
  • Chill 2 hours in refrigerator or approximately 15 minutes in the freezer.
  • Top each tartlet with 1 teaspoon whipped topping and a fresh berry.
  • Serve immediately or keep chilled until ready to serve.
