Coconut Lime Waffles Recipe

Coconut Lime Waffles make a delicious waffle recipe perfect for perking up your mornings.

Cook Time: 10 minutes
Total Time: 15 minutes
Servings: 6

Ingredients 

  • 2 cups all-purpose flour
  • 1/2 teaspoon kosher salt
  • 1 tablespoons sugar
  • 1 1/2 teaspoons baking powder
  • 1 teaspoons baking soda
  • 2 cups buttermilk
  • 2 eggs
  • 4 tablespoons butter, melted
  • 1 teaspoons vanilla extract
  • 1 cup sweetened coconut flakes, divided
  • 1 tablespoon lime zest
  • 2 tablespoons lime juice

Instructions 

  • Preheat waffle maker.
  • Whisk together flour, salt, sugar, baking powder, baking soda, buttermilk, eggs, butter, vanilla, 1/2 cup coconut flakes, lime zest and lime juice until well-combined.
  • In a medium dry skillet, toast coconut over medium low heat. Remove from heat and allow to cool.
  • Spray waffle iron with non-stick cooking spray and portion into waffle iron to cook according to waffle iron instructions. Remove from waffle iron and top with toasted coconut for serving.

  3. I wanted to let you know I tried this recipe recently, but I made it for me and my friend who is gluten free. She also is not a huge fan of shredded coconut. My solution was to make the recipe using 1 3/4 cups of the Americas Test Kitchen gluten free all purpose flour blend and 1/4 cup of coconut flour. I also used half melted butter and half melted coconut oil to try to give it more coconut flavor. It was super tasty and we both enjoyed it a lot.
