Avocado Chicken Salad makes a delicious twist for a chicken salad recipe. Made with chicken, tomatoes, onion, and avocado makes this a great gluten-free, grain-free, and Paleo chicken salad recipe.

Ingredients 

  • 2 boneless, skinless chicken breasts, cooked
  • 1 medium avocado
  • 1 tablespoon lime juice
  • 1/2 small onion, chopped
  • 8 grape tomatoes, sliced in half
  • salt and pepper, to taste

Instructions 

  • Cut cooked and cooled chicken breasts into 1/2 inch cubes.
  • Mash avocado until almost smooth. Add lime juice and stir until well blended. Add avocado mixture, chopped onion,and tomato slices to chicken. Toss lightly until well coated.
  • Salt and pepper to taste and serve.

    Great recipe! However, I added a couple of tablespoons of mayo and some crumbled blue cheese for a topping was even better!

    Quick, easy and scrumptious! I did add a bit more lime juice, avocado and used seasoned salt rather than Sea. Also, grabbed one of my 100 year cast iron pans to saute the seasoned chicken which I had cut into bite size pieces. That cut way down on the cooking time. When using chicken breasts, which have a tendency to be a bit dry, I soak them for up to 24 hours (in the fridge) in salt water and they become as succulent as dark meat. GREAT recipe, thank you SO much!

    I made this today for lunch. My daughters invited a friend over so all of their children could swim. I made the “mommas” this salad for their lunch. They loved it!! I served the tomatoes on the side in case someone wasn’t a tomato fan. I had tortillas for them to make a wrap, it was so good! I was afraid I would have to add something to this for a little moisture, but I didn’t it was perfect!. I also made your cucumber tomato salad. They thought they were getting the royal treatment to enjoy these salads while the kids ate their chicken nuggets!

  5. When I was a kid, my Mom’s friend made Avocado and egg salad. . It was done just like egg salad but had Avocado in it. I just remember it being delicious and have not had Avocado since. Do you have any recipe for this. Just my Husband and I now so I do not want a recipe for a big portion. My husband never ate Avocado so I am at least hoping he will eat it.

    Excellent spinoff for chicken salad. Very easy to prepare. My only minor deviation was to replace the chopped onion with chopped green onion. I served this on crunchy chopped romaine lettuce that was a visual and tasteful masterpiece. Warm garlic bread on the side completed the meal … and, of course, a couple glasses of pinot grigio.
