Waffles are always a favorite, but these salted caramel waffles make for an extra special treat.

My son loves waffles. Back up a minute. We all love waffles at my house. There is just something about them and their extra crispy outside with the tender, fluffy inside that begs for savoring at breakfast or brunch or even breakfast for supper! The other day, I had a bit of salted caramel I’d made sitting on the counter as I was making breakfast. In the spur of the moment, I reached over and grabbed the jar, poured some into my favorite buttermilk waffle batter and the rest is history.

Well, history might be a strong word. What I mean to say is, I’ve been hard pressed to make waffles without adding salted caramel to the batter ever since. They were all the things I love about a waffle that I mentioned before – the crispy tenderness – and they were so much more! The flavor of the salted caramel wasn’t overwhelming, but it was just right. It seriously makes my mouth water just thinking about it!

Since I had been in a rush with stirring my impromptu addition into the waffle batter, there were areas of the batter that had had more salted caramel in it than others. Those little pockets of caramel were right there in our waffles which made pure joy when we discovered them. I know, crazy, huh?

I topped each of our waffles with a drizzle more of the salted caramel along with a bit of maple syrup. Let me just tell you, that, my friends is heaven on a plate!

I was buying the frozen ones from the supermarket (hubby liked them) and was convinced that I could do better from scratch. These blew his mind. I bought sea salt caramels and cut them into little pieces and put them in the batter to up the ante. When I finally tried them, I was impressed! These are sooooo good!
