Now, I’m going to go ahead and tell you, this is such a quick and easy recipe and definitely one that you can switch out ingredients to your family’s favorites. You can even pour melted cheese over the top instead of using a shredded cheese. But, since it’s been so hot around here lately, I wanted to go with this cold cheese version.
Here’s how I pull together this amazingly quick, delicious chicken nacho salad, a 10 minute meal.
- 4 cooked chicken breasts, chopped
- 2 cups tortilla chips
- 4 cups lettuce
- 1 (14.5-ounce) can black beans, rinsed well
- 2 tomatoes, quartered
- 2 cups shredded cheese
- ¼ cup sour cream
- ½ cup ranch dressing
- 3 tablespoons salsa
- Assemble ingredients for salad topping with shredded cheese, sour cream and then dressing.
- To make dressing, mix together ranch dressing and salsa.
