I start by dicing bacon and cooking it in a skillet until it is perfectly crisp. Then, I remove it to a bowl while I cook my chicken.

I cut my chicken into about one inch, bite sized pieces and add my chicken to the skillet with the bacon drippings. The chicken cooks fairly quickly in the skillet and has so much flavor from the bacon. I add a few things to finish off my chicken and then begin preparing my quesadilla.

Ingredients 

  • 4 slices bacon, diced
  • 2 chicken breasts, cut into 1-inch pieces
  • 1/2 cup buffalo sauce
  • 1/2 teaspoon Stone House Seasoning
  • butter
  • 4 large tortillas
  • 2 cups pepper jack cheese

Instructions 

  • Add diced bacon to a 12-inch cast iron skillet over medium heat. Cook until just crisp. Remove the bacon from the skillet with a slotted spoon.
  • Add chicken to skillet with bacon drippings. Cook, stirring often, until chicken has cooked throughout and browned lightly. Pour in buffalo sauce and add garlic salt to the chicken. Stir to combine well. Remove from heat.
  • Melt about 1/2 tablespoon of butter in another cast iron skillet or on a griddle over low-medium heat. Add tortilla (flour or corn) and layer on about 1/2 cup of cheese, chicken, and reserved bacon pieces on one side of the tortilla. Fold tortilla half over the portion of the tortilla filled with cheese, chicken and bacon. Cook until cheese has slightly melted, taking care to not allow tortilla to become too dark.
  • Remove from skillet, cut into wedges and serve.

    Thanks for this great recipe, Robyn–I made it last night, and it was great! Easy, yet a nice change of pace for my family of picky eaters. Instead of hot sauce, which I didn’t think my three year-old would tolerate, I used Memphis BBQ sauce, reduced the amount of bacon to 3 slices, and added thinly sliced granny smith apples–yum!

    The perfect dish for me to try in my New 12″ Lodge Cast Iron Pan! I always order Chicken Quesadilla when we go for Mexican. I like onion and green pepper with it too. You know I pinned it!

  4. Buffalo sauce? Why doesn’t this recipe tell us what Buffalo sauce is? This is a glaring error in a recipe.

    1. @Wel just as you know what BBQ sauce is most people know what buffalo sauce is. Not a glaring error just because you’ve never heard of it. I suggest looking it up or asking someone on your next trip to the store. Franks Red Hot is a popular one.

    2. Wow really! If you don’t know what buffalo sauce is then I guess you haven’t been cooking very long and need to go do some store searching to look up items!

  5. I work, so I am use to taking my lunch. I like to cook, but my weak spot are lunches at home. I have trouble coming up with something that isn’t a sandwich, but on the other hand is quick and not too heavy. This is a terrific idea. Thanx
