There’s just something about the beginning of summer break that has made me a sleepy head in the mornings. I’m not sure if it is because I know that we aren’t having to rush to our homeschool academy twice a week or if it is that I feel like the days can be just a bit more leisurely than they have been the previous nine months. But, whatever it is, I’m loving it!

The last few mornings, I’ve rolled back over for “another 10 minutes” which then easily turns into another 15 or 20 before I realize it. Those extra minutes of sleep or lazing about in the mornings does a world of good for me. Well, at least I’m telling myself that!

But, by the time I’m up, I am starving! That’s when I try my best to think of something quick and easy and absolutely amazing for breakfast. This parfait is usually at the top of the list!

Since I keep yogurt, granola and fresh fruit on hand, I can usually have it whipped up in a matter of minutes. Less than five if I’m fully awake and a bit longer if the coffee is still seeping into my bloodstream.

Here’s my super quick and super simple parfait recipe. I think you will absolutely love it!

Simple Parfait Recipe

Ingredients 

  • 1 cup plain Greek yogurt
  • 1/2 teaspoon vanilla extract
  • 1/2 cup granola, + 1 tablespoon for topping
  • 1/2 cup fresh berries
  • honey, optional

Instructions 

  • Combine Greek yogurt with vanilla extract. Layer the parfait as follows: spoon half of the granola into the bottom of the glass, then add a layer of half of the prepared Greek yogurt and then half of the berries. Repeat layers ending with berries. Top with remaining granola and drizzle of honey, if desired. Serve immediately.
