Peanut butter recipes are some of my favorite. That’s been the case since I was a little girl and Daddy would always let me draw my initial with a knife in a fresh jar of Jif.

I also have an affinity for a little diddy about peanut butter, too.

Peaaaa-nut. Peaaaa-nut Butterrrr. Jelly.

Peaaaa-nut. Peaaaa-nut Butterrrr. Jelly.

That song always comes to mind when I start thinking about peanut butter.

I know, I know. I probably should seek professional assistance since I only think of songs we would sing on the playground in third grade when thinking of peanut butter.

But truthfully, you all should just see the days that I actually burst into the song.

It’s rather comical, I feel sure.

Grandmother always told me, “God gave us each unique talents, skills, and gifts. It is our gift to Him when we use them as He would like.”

So my friends, since that’s the case, and I know that being able to sing beautifully is not one of the gifts that He bestowed on me, I really should just hum softly and sway. Because you know, dancing wasn’t a gift I received either.

Rather than making my family’s ears ache with my singing, today I’ll give them a few treats instead.

  1. Because we don’t eat desserts very often, this is my favorite peanut butter recipe.

    Noodle Salad With Peanut Dressing

    8 to 10 oz. dry noodles (these can be any long noodles: Ramen, rice noodles, udon, soba, vermicelli or even spaghetti)
    1/4 Cup chunky peanut butter
    1/4 Cup low-sodium soy sauce
    2 Tbsp. rice vinegar
    2 Tbsp. water
    2 tsp. minced gingerroot
    1/4 lb. extra firm tofu, diced
    4 scallions or spring onions, trimmed and chopped (white and green parts)
    2 Tbsp. hot red pepper flakes (or to taste)
    2 Tbsp cilantro, chopped
    Chopped peanuts

    Cook noodles, drain and rinse with cold water.
    Stir together peanut butter, soy sauce, vinegar, water and gingerroot.
    Toss noodles, sauce and remaining ingredients in a bowl. Garnish with chopped peanuts.

  4. Did your song continue with…”First you take the peanuts and you pick ’em, you pick ’em…” That’s the peanut butter song I know. My Nana always said that God gave her this voice and she was going to “give it right back to him,” so she always sang really loudly in mass. 😉

    And, um, I want to make each and every one of these. Today.

  10. When I think of peanut butter I always sing “peanut butta jelly time, peanut butta jelly time.” That’s the only verse of the song I know and I don’t even know the name of the song! Any who peanut butter has been my favorite since childhood….I would get home from school (1st grade) and my snack was peanut butter and saltine crackers AND if I was lucky my Great Grandma would let me have grape jelly to go with!!!
