Okay, so can y’all tell I’m in love with apples right now? It’s sort of hard not to be with the apples in their peak. We have a few apple trees on our property that have the best apples to dry and use for my Grandmother’s Fried Pies, but this year the deer beat me to the picking. There was not a single apple left on any of our trees.

I was thrilled when we first came to look at this property and I saw all of the pears, persimmon, blueberries, black walnuts, muscadines, scupernongs, and pecans, but nothing excited me as much as those apple trees. I remembered the Fall drives with my parents and grandparents up into the North Georgia mountains. With leaves of gold, red, and yellow fluttering onto the road as we drove along, we’d pull into the apple orchard to pick a few baskets of her favorite apple varieties. While she concentrated on the best apples for baking and drying, I was busily looking for the best, most juicy and flavorful apples for snacking.

And that brings me to this recipe for Apple Pie Oatmeal.

Apple Pie Oatmeal is the perfect combination of hearty oatmeal made with steel cut oats, a bit of apple pie spice, and my favorite apple for snacking – a fresh, juicy honeycrisp.

It’s such a simple recipe to make and definitely a treat to eat.

Ingredients  

  • 4 cups boiling water
  • 1 cup steel cut oats
  • 2 teaspoons apple pie spice
  • 2 tablespoons butter
  • 1 tablespoon brown sugar
  • 1 apple chopped

Instructions 

  • Pour steel cut oats into pot of boiling water. Simmer for about 25 minutes.
  • Mix in apple pie spice, butter and brown sugar, stirring gently to combine.
  • Spoon into individual serving bowls and top with portion of chopped apple

  1. I actually drafted a recipe today with Quakers 1 Minute Oats b/c the Store did not have the steel cut Irish oatmeal I wanted and I couldn’t wait to try out my idea. I cooked three Granny Smith apples peeled and sliced thinly separately in 3/4 C Apple Juice with 1 t. Cinnamon 1/4 Nutmeg and Splenda Brown Sugar Blend, plus 4 T butter. At the end I made some corn starch solution and thickened the reduced apple juice. Simply heaven for fall. I will try it again with the steel cut oats as soon as I locate them. In fact I plan to cook the steel cut oats overnight in a crock pot after I get the apples cooked, so all will be ready the next morning.
