These Chocolate Marshmallow Sandwich Cookies make a delicious cookie recipe that chocolate lovers adore! So easy to make and fun to eat!
Remember my chocolate sugar cookies from a while back? Oh boy, aren’t those things amazing? Well, I wanted to share this absolutely delicious way that I turned those chocolate sugar cookies into these chocolate marshmallow sandwich cookies! Yum!
They are perfect for parties, get togethers and definitely wonderful for tailgating, football games, and Halloween. Well, in all reality, I can’t think of a holiday or happening that they wouldn’t be perfect!
I bake my chocolate sugar cookies according to that recipe’s instructions.
While the cookies cool, I cut my marshmallows in half and set them aside until the cookies are ready for them.
Then, flip each of the cooled cookies over and place one of the halved marshmallows onto the cookie. Then, pop the sheet pan back into the oven and under the broiler until the marshmallows begin to melt and get a light toasty brown.
Then, remove them from the oven and let them cool for just a second or so.
Top each of the marshmallow topped cookies with another chocolate sugar cookie and lightly press down on the top cookie. Let the sandwich cookies remain on the baking sheet to cool and then transfer to a platter for serving.

Chocolate Marshmallow Sandwich Cookies Recipe
Ingredients
- 48 Chocolate Sugar Cookies
- 24 regular marshmallows, cut in half
Instructions
- Prepare chocolate sugar cookies according to recipe directions. Allow to cool and then turn each cookie over. Top each cookie with a half of a marshmallow. Place the baking sheet of cookies under a broiler until the marshmallow becomes slightly melty and lightly browned. Remove from the oven and allow to cool for a few seconds. Top the marshmallow with a second chocolate sugar cookie and lightly press down on the top cookie to form the sandwich cookies. Repeat until all of the chocolate marshmallow sandwich cookies have been made.
- Allow to cool for a few minutes before transferring to a platter for serving.

I have just made the chocolate sugar cookies and they turned out great! However the marshmallows don’t seem to stick the 2 cookies together, any clue?
Anna, I’m not sure what happened but it sounds like the marshmallows didn’t get hot enough in the oven and/or the marshmallow got too cold before being topped with the second cookie. Make sure the marshmallow starts to melt just a little before taking them out of the oven, then only let the cookie/marshmallow cool just a few seconds before adding the top cookie. Hope this helps.
Just made a half batch of these, but accidentally used the full amount of cocoa powder for the cookies. They were extra chocolatey and delicious! Very rich. Texture was perfect! Thanks for sharing!
