Simple, quick meals have always been one of my weeknight staples. I love to start the slow cooker early in the morning and be able to enjoy a delicious home cooked meal with my family for supper while still being able to run here and there during the day. Slow cooked pot roasts, shredded chicken, and pulled pork are some of my family’s favorites.

This week though, I had to think even more quickly to get a hot, delicious meal on the table for lunch! I had been deep into my morning work when my husband called and said he was coming home for lunch. Better yet, he would be home in about 15 minutes and needed to leave quickly for a meeting. He hadn’t been feeling well and just wanted something hot and homemade.

Yikes! Talk about pressure!

I knew a quick soup would be perfect.

My husband walked in the door to a pot full of soup being ladled up from the stove.

I think I impressed him.

To be honest, I think I impressed myself!

Here’s my quick and easy White Bean Soup with Bacon recipe. I think you will absolutely love it!

White Bean Soup with Bacon Recipe

White Bean Soup with Bacon makes a simple, quick and delicious lunch or supper that comes together in minutes. Get this favorite bean soup recipe you’ll turn to time and again.

Ingredients 

  • 4 slices bacon, diced
  • 1/2 onion, diced
  • 2 cups cooked navy beans , or 2 (16-ounce) cans rinsed and drained navy beans
  • 1/4 teaspoon fresh thyme
  • 1/4 teaspoon ground black pepper
  • 2 cups chicken stock or broth, or broth

Instructions 

  • Add bacon and onion to a medium skillet over medium heat. Cook until bacon is browned and onion is tender, stirring frequently with a wooden spoon.
  • Add navy beans into a medium saucepan over medium heat. Pour bacon and onions from skillet into the beans. Add thyme, black pepper and chicken stock.
  • Allow to simmer over medium heat for about 10 minutes.

  1. Made the soup with northern beans and peruvian beans no can from scratch and added chicken tigh meat it took a little longer but it was delicious mmm

    My family loved this soup, and it was so easy! I made some minor adjustments- I replaced one can of beans with canned chicken and garnished the soup with parmesan cheese. Thanks for a terrific recipe I will make again.

    Another plus -white beans have more potassium than any other food I could find.
    It’s more than twice what an avocado has and way more than a banana.
    I run low on potassium often because of medicines I take due to cancer. I take a supplement, but if it dips really low eating it in a meal seems to bump it up quickly.
