I’m excited to be sharing about a Microwave Only challenge I took and a great giveaway for a Panasonic Microwave Oven with Inverter Technology with you!

I remember when my family purchased our first microwave oven. It was black, large, and an appliance that my sister and I were just as fascinated with as my mother was. She loved the speed in which it helped her get food on the table. My sister and I loved to pretend we could see the “microwaves” as food cooked. What can I say, there was little in way of entertainment in our small town on a week night! Mama cooked so many meals in her microwave, from steaming veggies to baking potatoes to making her family-famous chocolate pudding for dessert. It became an indispensible tool in her kitchen. Fast forward more years than I want to admit and my microwave was simply used to reheat my coffee throughout the day and pop popcorn on movie night.

That’s why I was so excited when Panasonic contacted me about their #MicrowaveOnly challenge for their new Panansonic microwave oven with inverter technology.

Here’s the deal. They asked me to create all of our family meals for an entire day using the microwave as the only cooking appliance. I wasn’t sure I could do it, but I was certainly intrigued enough to jump in with both feet in planning our meals. Not sure exactly what all I could safely prepare in my microwave for meals, I turned to their website for tips and recipes. Since so many of them were developed by the Culianary Institute of America for Panasonic, I knew they had to be fool-proof to get me started. This challenge just might be easier than I first thought!

I also decided to add in one favorite that I remembered from my childhood. Potato chips! Yes, Mama would make potato chips in her microwave routinely when I was growing up and I thought they were the best I’d ever tasted! So, if you haven’t already tried them, check out the Sweet Potato Chips recipe that I shared last week for these delicious little things!

They are perfect as a quick snack or side with a sandwich, burger, or more! We love them! So, you better believe these babies were included in my day of microwave only cooking!

My family adores green beans and this recipe is on the table in about 8 minutes! Yum!

After spending a day using my microwave only, I have to say I’m hooked! My microwave is no longer a fancy appliance used to reheat my coffee or pop popcorn! We are using it to get meals on the table more quickly throughout the day in ways that would surely make my Mama proud!
