Happy Tuesday! We’re back home from our escape to warmer weather and time with family. It was a bit crazy to leave 80-degree temperatures on Sunday to come home to a forecast of ice and snow overnight on Monday. Just the thought of it had me pulling out the slow cooker that I keep in our RV to make a big batch of white chicken chili for our supper!

There’s nothing like starting something at the beginning of a trip, smelling it cooking for nine to ten hours and over 500 miles, but then having a hot meal for supper ready when you arrive home.

Boy did the trip smell amazing!

Thank goodness for slow cookers! Especially the kind with secure locking lids for the bumps along the way!

  1. My mom would always make me hamburger and barley soup. Its now my favourite dish when the weather gets chilly.

    PS: It’s a slow cooker recipe. ๐Ÿ˜‰

  2. My favorite is pork roast, sauteed portabella mushrooms, mashed potatoes with pork gravy and hot biscuits! And, a short six hour nap after. ๐Ÿ™‚

  3. My favorite cold weather meal is haddock fish chowder, whole wheat buttermilk biscuits and a cucumber and tomato salad. To complete the meal follow these tasty treats with a warm apple cranberry crisp with vanilla ice cream. This meal warms and satisfies you on a cold winter night!

  4. Potato soup from the slow cooker! Prep work (cutting, chopping, dicing) can take more time than most people want for a slow cooker recipe, but it’s soooo worth it!

  5. Soup simmering on the stove, or in a slow cooker, is my favorite for cold weather. Today I made soup with ground beef, broth, onions, celery, carrots, chopped cabbage, diced tomatoes, mixed vegetables, spices, and noodles.

  6. Beans! A bowl of beans is Winter food for the soul. Navy beans with a ham bone, red beans with a ham hock, pinto beans with a smoked turkey leg, lima beans with bacon come to mind. Warms me up thinking about it.

  7. Hands down swiss steak the way my mom made it in her crock pot. Tenderized round steak layered with cream of mushroom soup, quartered potatoes, carrots and onions cooked on low 10-12 hours…. Yummo my favorite cold weather comfort food!

  8. When it is cold I like to make breakfast for dinner. Being from SC and living in CA, you can’t go anywhere to have grits very often. I like grits that cooks slow; long, gets creamy; thick. Would love a crock pot recipe. In SC there is a Fish farm called “Old McDonald’s Fish a Farm in Sweetwater. They fix fried catfish with the tails on. Grits with butter; hush puppies.
    That is what I like here on a cold night. Grits, fish; hush puppies.
    It takes me home.

  9. i love cleaning out the vegatable drawer of the frig snd making fresh crockpot soup. Add broth fresh cooked cubed meat and spices. Crickpot cook for 5 hrs. I made it last time with cabbage and tomatoes.

  10. Asian style short ribs. I just recently tried a recipe for Asian style short ribs done in the slow cooker. They were incredible!!! Even my grown son fell in love with them. I’ve never had beef this tender and juicy before. Perhaps the most interesting ingredient is a chopped, fresh pear. Who knows? Maybe that’s what made them so marvelous.

  11. Being from S. Louisiana, my favorite cold weather meal is gumbo. As soon as the weather cools a little, people around here start making gumbo.

  12. My favorite cold weather meal is actually almost any type of thick, such as mushroom barley, or creamy, such as tomato basil soup with lots of Ritz crackers broken into them. As a child i was not wild about soup at all, but as an adult, they are my favorite. Thank you for this opportunity.

  13. We love a slow cooked pork roast, cooked only with canned tomatoes or tomato sauce, until it just melts in your mouth. Also steamed broccoli and mashed potatoes or sweet potatoes.yum!

  14. taco soup… Best ever cold weather meal.. But chili, white chicken chili, red beans and rice or chicken and dumplings are all close runners up.

  15. I love taking a rotessier chicken & adding spinach, celery, carrots, mushrooms & onions. ….then whatever spices I feel like…..yum!

  16. Baby when it’s cold outside I LOVE to crank up my crockpot to slow cook some nice tender succulent BBQ Spareribs!!!! Mmmmmm I can taste them now! Hopefully I will get to use “my new” crockpot if I win!! I like to accompany the ribs with Brussel sprouts w/ bacon, corn pudding, homemade fried rice, sweet hawaiin rolls, and a nice tall glass of sparkling peach tea!!!!! Omg!!!! I’m getting hungry!!!!

  17. In cold weather, I seem to gravitate toward soup or chili recipes. I feel like I’ve made nothing but soup and chili this whole year so far, but that’s fine by me! My favorite is Escarole Soup with Turkey Meatballs.

  18. We have been borrowing my moms old crock pot and with the cold weather we’ve been enjoying spicing things up with mexican crock pot meals ๐Ÿ™‚ We made a spicy and filling burrito bowl meal the other night ๐Ÿ™‚ I love soups but mexican pots give me a glimmer of hope for Spring ๐Ÿ™‚

  19. My favorite is gumbo or sweet potato-black bean chili served with cornbread. My husband can’t have his chili without cornbread. ๐Ÿ™‚
