Bring about 2-quarts of water to a rolling boil. Add cauliflower florets and cook until fork tender, about 10 minutes. Remove cauliflower from pot and place into a blender, along with garlic cloves and oil from the roasted garlic. Blend for about 10 seconds, until smooth. Add salt and pepper to taste. Remove from blender and serve warm.
