Prepare the sweet potatoes. Wash and dry the sweet potatoes, making sure they are completely dry. Pierce them all over with a fork to allow the steam to escape as they air fry for a fluffier interior.
Prepare the air fryer. Preheat the air fryer to 400º F.
Oil the sweet potatoes. Brush (or rub with a clean hand) the sweet potatoes with olive oil for crispier skin.
Cook in the air fryer. Place the sweet potatoes in the air fryer, making sure not to overcrowd them.
Check for doneness. Cook for 30 minutes, or until a fork easily pierces through the potato and the skin is tender and crispy. The cooking time will vary depending on the size of the sweet potato. Larger sweet potatoes may need up to 45 minutes.
Serve. Carefully remove the sweet potatoes from the air fryer and serve or allow to cool and store for later.
