Okay, Paleo specific recipes are a bit of a departure for me, I know. While you can easily find recipes to fit just about any special diet or lifestyle on Add a Pinch (egg free, grain free, sugar free), you certainly won’t find me touting any one way of eating over another. But, this past week we were on an RVing trip with family and one of my brothers-in-law follows a Paleo lifestyle.

So, wanting to make sure I had something sweet to offer throughout the trip, I decided to make these Coconut Pineapple Paleo Popsicles.

I have an admission to make though. The first try bombed. Big time.

They tasted like sunscreen.

I’d gone just a bit too far in my attempt at a strict Paleo popsicle and had used organic unsweetened coconut milk, pineapple, and that’s it.

I couldn’t rest until I had those popsicles conquered.

So, I grilled pineapple slices to release as much of their natural sweetness as possible, allowed them to cool, chopped them up and mixed them into coconut milk.

Then, I added just a wee bit of raw, organic honey to sweeten the popsicles just a bit.

I then poured the mixture into my popsicle molds, froze them for a few hours, and then couldn’t wait to have a taste.

Coconut Pineapple Paleo Popsicles are the perfect, paleo friendly sweet treat. Get this easy Coconut Pineapple Paleo Popsicles recipe.
Prep Time: 10 minutes
Total Time: 10 minutes
Servings: 6

Ingredients

  • 12 ounces coconut milk
  • 1/2 cup chopped grilled pineapple
  • 1 tablespoon raw organic honey

Instructions 

  • Combine coconut milk, chopped pineapple, and honey. Pour into popsicle molds and freeze until firm, at least 1 hour.
