A mint chocolate chip ice cream recipe made from simple ingredients and so easy! If you have mint chocolate chip ice cream lovers in your house, you need this recipe!
Ice cream is one of my family’s favorite desserts. Like, we could eat it every day throughout the year and never grow tired of it. Seriously. We love ice cream – especially homemade. And lately, mint chocolate chip is my son Sam’s favorite ice cream flavor. I can’t believe it has taken me this long to share our recipe for it!
Last week, his Boy Scout group had a weeklong camping trip on Cumberland Island, Georgia. If you’ve never heard of Cumberland Island, I think you’ll love learning just a bit about it – well, if you are into that sorta thing. Basically, it is a barrier island off the coast of Georgia and is home to wild horses, sea turtles and so many other wild animals. It is the largest of the islands off Georgia’s coast and became nationally known when JFK, Jr and his bride Carolyn wed there. It is absolutely glorious!
Only accessible by a ferry, to visit you definitely want to pack light and only take essentials. An ice cream freezer didn’t make the cut. Ha!
So, I’d planned all week for dessert on Saturday after he returned home I’d have his ice cream waiting on him!
The look on his face was enough for me to know that it was a good plan.
I began with our favorite vanilla ice cream base and then transformed it into this out of this world mint chocolate chip! My base recipe is so easy and one that I use so much during the summer to then whip up another favorite version. It is an egg-free recipe that comes together quickly and easily. Of course, you could also use my old fashioned vanilla ice cream recipe for a super decadent version!
I also added a couple of drops of green food coloring to the ice cream to give it that ice cream parlor look. You can definitely skip that step if you prefer and I do on occasion.

Glad to hear that he enjoys this, Min! Thanks!
I should add that we are a sugar-free household. ย I subatituted 3/4 cup xylitol and 6 drops of liquid stevia for the sugar. ย No unpleasant aftertaste. ย Absolutely delicious!ย
This is the best mint chip ice cream recipe I have tried yet! ย Thank you!
I’m so glad you loved it!!! xo
I’ll try it!It seems delicious!!!
This was so simple and delicious! Only minor modifications… I skipped the food coloring and melted 1/2 cup of chips and drizzled it in after the Ice cream started to set up. This created small shards of chocolate throughout. So yummy, My family thought it was HaagenDaz. Thanks for a fabulous recipe…I’ll never buy mint chip ice cream again!
Wonderful recipe! Closest one I’ve found so far that actually compares to store-bought. I have just a couple recommendations. If you don’t like your ice cream too sugary, cut the sugar down by 1/4 cup. I used the full cup of sugar and I could taste every granule lol. Another thing is that some ice cream makers, like mine, recommend that you hold off adding anything like chocolate chips or cookie pieces until the last 5 minutes of mixing. Otherwise, great recipe and I will be making it again!
Robyn, mint chocolate chip ice cream is one of my favorites! I love the light green hue of this one, so pretty! : )
