There’s just something about peanut butter icing that immediately takes me back to third grade at my small elementary school. Always a peanut butter lover, I couldn’t wait until I saw that we were having peanut butter cake with peanut butter icing on the lunch menu that would come out for the next week. You see, we had a small, weekly newspaper that was released each Thursday and in it would be the lunch menu for all of the local schools for the upcoming week. Yes, really. I loved that little paper. As a matter of fact, when I was in high school, I worked for the paper one year. I did a few odd-ball jobs there, but also was responsible for writing the copy for local sports coverage for the editor to review. Oh my, my, my. How in the world they ever let me do that, I’ll never have a clue.

Anyway, back to the peanut butter icing. One of the ladies that worked in the lunchroom was famous for her peanut butter cake with peanut butter icing. Not frosting, mind you. Frosting is a fluffy confection while icing is a bit thinner and pours onto a sheet cake, coating it like a glove. And her peanut butter icing was out of this world. She’d make it on brownies, blondies and her peanut butter cake. Heavens, I loved that stuff. And I would be sure to look at the newspaper sometime before Sunday evenings so that I could be sure to tell my Mama which days I wanted to eat lunch in the lunchroom versus take lunch from home. All because of her cake.

I doubt seriously that peanut butter cake with peanut butter icing is still served in many schools and I’ve not seen a school menu printed in the newspapers around here in more years than I care to count. So, here’s to the good ole days of small town newspapers and looking forward to the lunch menu!

Peanut Butter Icing Recipe

This peanut butter icing recipe is perfect on top of so many desserts! Full of flavor, it is an icing recipe sure to be a peanut butter lover’s favorite!

Ingredients

  • 1/2 cup (113 g) butter
  • 1/2 cup (135 g) peanut butter
  • 1/2 cup (113.5 g) buttermilk
  • 2 1/2 cups (284 g) confectioners’ sugar
  • 1 teaspoon (5 g) vanilla extract

Instructions 

  • Add butter, peanut butter and buttermilk to a medium saucepan over medium heat and bring to a boil. Remove from the heat.
  • Whisk in powdered sugar and vanilla to a spreading consistency, or use an electric hand or stand mixer, if preferred. Pour peanut butter icing over warm cake and spread to cover edges using a rubber scraper or offset spatula. Allow to rest for a few minutes before slicing and serving.

    Does this icing harden? I want to use it on rice crispie treats that I bag for gifts.

      Hi Melly,
      No, this icing does not harden as much as I think you would want. It hardens more than the peanut butter frosting but it is not a hard icing like a royal icing. Hope this helps.

    Just finished baking and it is delicious! I used the paenut butter cake cake and icing recipes.
    We have a bakery here that I usually get the peanut butter cake from because I could never get it to taste like theirs. Needless to say, I will not be going back to the bakery.

    My mama came up with a cake recipe by scratch and then use this icing recipe as icing she is very glad that somebody came up with one because she was stressing out on how to make icing thank you for coming up with this idea.

    Found this recipe tonight while looking for for one to put over Brownies…. And it’s amazing! Was actually 1/2 cup short on confectioners sugar but still is just great. This is exactly what your looking for a good peanut butter icing!
