No Bake Granola Bites Recipe

These No Bake Granola Bites are perfect for breakfast, a snack, or a sweet treat on the go!
It is no secret that my guys love camping. This summer, they have two week-long trips planned to be one with nature while I’ll be here at home being one with electricity. Don’t get me wrong, I think camping is awesome, wondrous, adventuresome, and any other adjective that you can throw in there that means good things. But, for me, personally, my form of camping is in the motorhome. I’ll admit it. I’m a wimp and I’m perfectly okay with that. Thankfully, Bart and Sam are perfectly okay with my wimpy nature, too.
But, to show some semblance of remorse at not packing up a tent and heading out there with them, I try to send them off with homemade goodies when they leave. Because, well, it is the least that I can do. Over the years, I’ve gotten good at making treats that I know will keep well while still being absolutely delicious. That’s where these no bake granola bites come into play. Technically, they could make them themselves while they are out, but that would stop all the fun of me sending them with them.
These little granola bites are packed with good stuff, too. Oats, nuts, chocolate, nut butter, honey – you know, the essentials. Ha. In just a little bit, I can whip up a batch of these babies, pack them up and send them on their way. But, thankfully, these little granola bites aren’t just for campers! I like to keep a little stash of them around for a quick grab and go treat or even for breakfast with a cup of coffee. Hey, don’t judge!

No Bake Granola Bites Recipe
Ingredients
- 2 1/2 cups (223 g) rolled oats
- 1/2 cup (69 g) almonds,, pistachios, pecans, cashews: your favorite
- 1/4 cup (43 g) chocolate chips
- pinch (0.4 g) kosher salt
- 3/4 cup (204 g) natural nut butter
- 1/3 cup (105 g) honey
Instructions
- Line a rimmed sheet pan with parchment paper.
- Add oats, nuts, chocolate chips and salt to a medium bowl. Stir in nut butter and honey until well combined. Scoop mixture into about 2 tablespoon sized scoops and press together to form a ball. Place onto parchment lined paper and allow to dry for an hour to overnight. Alternately, you can place into the freezer to allow them to quickly set. Store in an airtight container for up to one week.

Absolutely. I use a natural peanut butter or natural almond butter mostly. Hope that helps and that you love them!
We like to make then for when we are walking on the trails. Great portable snack.

These look delicious! Do you leave these out on the counter, or store them in the refrigerator?
I leave them on the counter in an airtight container. They disappear fairly quickly! Of course, they will be fine stored in the refrigerator in an airtight container as well. Either way works fine.

We love to camp as a family (tent camping) but since we’ve moved to the homestead we really can’t leave the animals. Michael and the boys will go without me once or twice a year. I plan all their meals and make what I can ahead of time so at least they are not eating Top Ramen all weekend (gross).
Hopefully some day we will find some responsible young person to watch the animals while we are gone. Then we can all go camping together.
