I made this Chicken with Ham and Swiss recipe the other night out of desperation.

I had been running errands all day, Little Buddy and I were getting our flu shots, buying groceries, returning books to the library, and all of those things that sound like they’ll just take a few minutes, but end up taking more time than you’d bargained.

After getting the groceries all unpacked and put away, I realized what time it was and had to hustle to get something started for our supper.

Do you ever feel like that?


That before you can get one thing done and take a deep breath that ten more things are standing in line waiting for your attention.

Well, they aren’t actually standing in line.

They are more in the form of your favorite people in the world calling, “Mama” from somewhere distant in the house, phones ringing and before you can get to them you hear the chirp of a voicemail immediately followed by the little bell sound from a text, a dog barking as the big brown truck pulls up in the driveway and remembering you have to hold him so he doesn’t decide to climb up into the truck looking for treats from the driver.

Yeah, it all seems to happen at once, doesn’t it?

This little chicken recipe is a pretty good answer to those kind of afternoons. It is about as simple as you can get, but certainly doesn’t taste like it.

It sure is versatile, too.

This basic recipe can be dressed up any number of ways.

Love thyme? You can easily add it to the Dijon to take the flavors up a notch or two. If you prefer a bit of breading on this recipe, you can easily add Panko or other seasoned bread crumbs to your chicken before cooking.

Chicken with Ham and Swiss Recipe

Chicken with Ham and Swiss is ready is about 20 minutes and makes a delicious meal. Chicken with Dijon mustard and topped ham and swiss cheese slices.
Prep Time: 5 minutes
Cook Time: 15 minutes
Total Time: 20 minutes
Servings: 6

Ingredients

  • 6 chicken breasts
  • salt and pepper
  • 3 tablespoons olive oil
  • 4 teaspoons Dijon mustard
  • 8 slices thin ham
  • 8 slices thin Swiss cheese

Instructions 

  • Season chicken with salt and pepper to your taste.
  • Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook until golden brown and juices run clear when pricked, about 5 to 7 minutes per side.
  • Heat broiler. Place chicken on a broiler-proof baking sheet. Spread ยฝ teaspoon mustard on each piece of chicken. Top each with a slice of ham and cheese. Broil until the cheese begins to brown, 3 to 5 minutes.

    My family really liked this. I left out the DIjon because my kids don’t like it and I put a layer of cream of chicken soup there instead and added some bread crumbs. It came out good and was SO much faster and easier than all of the other cordon bleus I have made. Flattening chicken is so tedious and messy and usually so necessary for cordon bleu that it takes forever. Skipping that step made it so much easier and it still came out really good.
