Sam has always loved peppermint bark since he first discovered it during a visit to Santa when he was just a little bitty fella and then climbing up on his stool helping me make it during Christmas to give as gifts.

He’d stand there patiently until it was time to crush the candy canes and sprinkle onto the melted chocolate and then the second he’d finished sprinkling on the peppermint, he’d ask if it was ready to taste. Every single time. 

Goodness was he ever precious. Still is.

One of the treats he looks forward to in his stocking on Christmas morning is a slab of peppermint bark all of his own. He’ll ration it out so that it last as long as he possibly can stand it, but believe me, he’s asking me to make more just after the new year.

And for Christmas dessert, he always requests my Peppermint Chocolate Cake – and for good reason. That thing is scrumptious and gorgeous, too!

This year, I thought I’d combine his love of peppermint bark with his love for sugar cookies into these little cookies. And boy let me just tell you, they are amazing.

Absolutely amazing.

And thankfully, they are as simple as can be to make!

It only takes a jiffy to whip up the chocolate sugar cookies that are the base for these cookies and while they are baking, I like to go ahead and melt my white chocolate chips and crush my peppermint. That way, once the cookies come out of the oven and cool just a minute or two, I can spread the white chocolate on top of the cookies and top them with the peppermint pieces.

Peppermint Bark Sugar Cookie Recipe

Ingredients

Chocolate Sugar Cookies Recipe:

  • 1 cup (226 g) butter, , softened
  • 1 1/2 cups (297 g) granulated sugar
  • 1 large (50 g) egg
  • 1 3/4 cups (210 g) all-purpose flour
  • 1/2 cup (42 g) unsweetened cocoa powder
  • 1/2 teaspoon (2 g) baking powder
  • 1/2 teaspoon (1 g) Kosher salt
  • 1/4 teaspoon (1 g) espresso powder, optional
  • 1 teaspoon (5 g) vanilla extract

Peppermint Bark Topping:

  • 1 1/2 cups (252 g) white chocolate chip morsels
  • 2 teaspoons (9 g) peppermint extract
  • 1/2 cup (106 g) crushed peppermint candy

Instructions 

Chocolate Sugar Cookies Recipe:

  • Preheat oven to 350ยบ F. Line cookie sheets with parchment paper or a nonstick baking mat.
  • Cream together butter and granulated sugar until light and fluffy, about 3 minutes. Add egg and mix until well-combined. Stir in flour, cocoa powder, baking powder, salt, espresso powder and vanilla.
  • Scoop cookie dough by the tablespoon full and roll into a ball.
  • Place cookie dough onto baking sheet, spacing about 1 1/2-inches to 2 inches apart. Lightly press each cookie down. Bake for 8 to 10 minutes. Remove from oven and cool.

Peppermint Bark Topping:

  • Melt white chocolate chips in a microwave safe bowl according to package instructions. Remove from microwave and stir in peppermint extract. Spoon onto top of cookie and top with sprinkle of crushed peppermint candy per cookie.
