Pumpkin Pancakes Recipe

I took my favorite pancake recipe and made it ready for fall and pumpkin season this past weekend. It made my house smell divine and my mouth was watering something fierce while I was getting it ready to put on the griddle. The addition of cinnamon and pumpkin to these pancakes was perfect for these pumpkin pancakes.

I know I’ll get more requests for my pumpkin pancakes this fall and you better bet they’ll be on the table Halloween morning. What a treat! {without the tricks}

A delicious season recipe for pumpkin spiced pancakes.

Serves: 8

Ingredients
  • 2 cups flour, self-rising
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 2 teaspoons cinnamon
  • 1 egg
  • 1 cup buttermilk
  • 3 tablespoons butter, melted
  • 1 15-ounce can pumpkin

Instructions
  1. Combine dry ingredients and gently whisk through to mix.
  2. Pour buttermilk into liquid measuring cup, add in butter and egg and lightly beat together with a fork as you pour into dry ingredients.
  3. Pour in pumpkin and mix together til well-combined.
  4. Heat griddle over medium heat.
  5. Drop ¼ cup scoops of batter onto griddle.
  6. Flip once.
  7. Top with a touch of butter while still piping hot.
  8. Serve hot with your favorite maple or pancake syrup.

    you know, they would make a mighty fine dinner too, you could put apple sauce on them! yum. We make sweet potato pancakes for dinner, equally yum!
