Pimento Cheese Chicken Recipe

This Pimento Cheese Chicken recipe combines two of my all-time favorite dishes – pimento cheese and baked chicken. One of the easiest chicken recipes.
Pimento cheese is one of those things that typically shows up at nearly every family event that we have. It has always been that way. Growing up, I could always depend on my grandmother having a big bowl of pimento cheese that would be quickly devoured at reunions, showers and church get togethers. Then, when I married, it was actually a relief to learn that my mother-in-law was famous for doing the same thing!
So, naturally, I knew that baked chicken would be spectacular topped with a bit of pimento cheese. It keeps the chicken moist and from drying out and gives it a ton of flavor. Thankfully, my family loves it as much as I thought they would and it is now one of those chicken recipes that they request again and again.
If you’d like, you can chop the chicken to make it into bite-sized pieces and make this more of a casserole type meal. We love it as individual pieces of chicken, but either way would work perfectly.

Pimento Cheese Chicken Recipe
Ingredients
- 2 teaspoons olive oil
- 4-6 boneless skinless chicken breasts
- Southern Pimento Cheese recipe
Instructions
- Preheat oven to 375ยบ F. Place chicken on a rimmed sheet pan or in a large skillet. Drizzle with olive oil and bake until internal temperature reaches 165ยบ F and juices run clear when chicken is pricked with a sharp knife.
- Spread pimento cheese evenly on top of chicken pieces and return to the oven to allow the cheese to melt, about 8-10 minutes.

if you live in South Carolina, try using Palmetto Cheese! they have jalapeno and bacon versions available. I get mine at Walmart. They also sell at Food Lion and I think IGA stores. Palmetto Cheese is so much better than regular old pimento cheese! its also GREAT on top of a burger!

What a splendid main dish. I don’t use that kind of cheese at all. No good reason for it except I don’t think about it. Anyway such an easy dish leaves the cook time to make something more complicated for sides and/or dessert if she/he wants to.
