Air Fryer Mexican Street Corn Recipe – This flavorful, super easy Mexican Street Corn recipe is ready in 15 minutes in the air fryer and always a favorite!

You know that amazing aroma coming from the roaster selling Mexican Street Corn? Good, right?! Well, I’ve made it at home – and made it so easy!
Since March arrived, I’ve been so ready for spring. Spring with it’s promise of warmer days, picnics, fairs and festivals is just around the corner! And I love all the fresh vegetables and fruit that it brings, don’t you?
My family loves my Mexican Street Corn recipe, and I usually make it more in spring and summer when it’s warm enough to grill outside.
Since we love this – and I am seriously in love with my air fryer – I just couldn’t wait to make this in it! I just thought if you are as ready for warmer, sunnier days like I am, you might appreciate this zesty, delicious Mexican Street Corn now!
And oh mercy, it’s amazing!
And so easy! You know I love quick and delicious recipes for those busy weeknights. This Mexican Street Corn is perfect in the air fryer and I’ve been making it like crazy! It’s ready in 15 minutes, my family loves it! Such a winner all around.
Here’s how I make it.
I start with cleaned, fresh corn on the cob. I just pop my corn on the cob into my air fryer basket and cook for 10 minutes at 390 degrees.
Then, I sprinkle the cheese onto my corn and cook for 5 more minutes.
Once done, I remove from the air fryer, top with chili powder and Stone House Seasoning, along with fresh cilantro. I serve with fresh lime wedges.
Now, you may know that traditional Mexican Street Corn also has a thick coating of mayonnaise on the corn. You can definite add that if you’d like, I just wanted to reduce the unnecessary calories and fat from this recipe. If you want to add, I would rub each ear of corn with ¼ cup of mayonnaise before sprinkling with the cheese and cooking for the final five minutes. I promise you though, we don’t miss it!

Here’s my Air Fryer Mexican Street Corn Recipe. I hope you love it as much as we do.
Air Fryer Mexican Street Corn Recipe
- 4 pieces fresh corn on the cob cleaned
- 1/4 cup crumbled cotija cheese or Feta cheese
- 1/4 teaspoon chili powder
- ½ teaspoon Stone House Seasoning
- 1/4 cup chopped fresh cilantro
- 1 medium lime cut into wedges
- Place corn into the air fryer basket and cook at 390ºF for 10 minutes.
- Sprinkle corn with cheese and cook at 390ºF for 5 more minutes.
- Remove from air fryer and sprinkle with chili powder, Stone House Seasoning, and cilantro. Serve with lime wedges.
