Chicken salad with apples and dried cranberries is always a favorite. Made with chicken, a crisp apple, and tart dried cranberries, this chicken salad has tons of flavor!

Another quick, easy, super simple recipe that my family just loves is Chicken Salad with Apples and Dried Cranberries. It’s the perfect blend of a delicious chicken salad with a little bit of tart from the Granny Smith apples, sweet from the dried cranberries, and pure deliciousness from the tender bites of chicken.

A simple recipe for my favorite chicken salad will pull you through on any number of weekdays for lunches, hectic weeknights for supper, or even when entertaining!

Using my slow cooker chicken method, I can have this chicken salad whipped up in about 5 minutes.

Now, I don’t know about you, but having a homemade lunch or supper on the table in about 5 minutes surely deserves a medal of some sort.

This chicken salad also makes a great filling for a wrap, a sandwich, or served on a bed of lettuce leaves.

I have another little trick to share with you about this chicken salad, too. It makes a mighty popular salad to serve at a ladies luncheon. Just increase the quantities in the recipe for the number of people you’ll be serving.

Ingredients

  • 4 chicken breasts, cooked and chopped
  • 1 Granny Smith apple, chopped
  • 1/ 2 cup dried cranberries
  • 1/2 cup mayonnaise
  • 1/2 teaspoon lemon juice
  • pinch kosher salt

Instructions 

  • Stir all ingredients together until well-combined.
  • Serve cold as a salad or as filling for a sandwich or wrap.
  • Store in an airtight container in the refrigerator.

    Ever since the day I took one small leap of faith and added fruit to my chicken salad instead of celery it’s been something I love so much more. I’ve not done apple…now that needs to change doesn’t it? Perfect summer lunch is right.
