It’s the perfect blend of a delicious chicken salad with a little bit of tart from the Granny Smith apples, sweet from the dried cranberries, and pure deliciousness from the tender bites of chicken.

Using my slow cooker chicken method, I can have this chicken salad whipped up in about 5 minutes.

Ingredients 

  • 4 chicken breasts, cooked and chopped
  • 1 Granny Smith apple, chopped
  • 1/ 2 cup dried cranberries
  • 1/2 cup mayonnaise
  • 1/2 teaspoon lemon juice
  • pinch kosher salt

Instructions 

  • Stir all ingredients together until well-combined.
  • Serve cold as a salad or as filling for a sandwich or wrap.
  • Store in an airtight container in the refrigerator.
