Spinach Artichoke Chicken makes for a simple, delicious meal that everyone will love.

I made something I think you are going to simply love. This. Spinach Artichoke Chicken.

Oh my goodness gracious is it amazing! Think your favorite spinach artichoke dip all over the top of baked chicken.

Yeah, it really is out of this world.

There’s something so comforting about this spinach artichoke chicken that it has really become one of our favorite ways to eat chicken now. While the ingredients list doesn’t specify, I like to use lower fat ingredients for the topping such as part-skim mozzarella cheese, fat-free Greek yogurt, and a light mayonnaise. Of course, use what you prefer!

And luckily, it is one of the easiest things to make that you can think of!

You just place your chicken into a baking dish, then mix up your spinach artichoke topping and pour it on top. Bake it and then watch it disappear.

How simple is that?

The chicken turns out so flavorful and tender. My mouth is watering just thinking about it.

It’s great to get kids to eat their vegetables, too.

Spinach Artichoke Chicken makes for a simple, delicious meal that everyone will love.
Prep Time: 10 minutes
Cook Time: 35 minutes
Total Time: 45 minutes
Servings: 8

Ingredients

  • olive oil spray
  • 8 chicken breasts
  • 1 (13.75-oz) can artichoke hearts packed in water, drained
  • 10 oz spinach, thawed and squeezed
  • 2 shallots, chopped
  • 1 clove garlic, minced
  • 1/2 cup Greek yogurt
  • 1/2 cup mayonnaise
  • 1/2 cup Parmesan cheese
  • 1/2 cup grated mozzarella cheese

Instructions 

  • Preheat oven to 375ยบ F. Spray baking dish with olive oil nonstick baking spray.
  • Place chicken into baking dish. Salt and pepper chicken and then bake 15 minutes.
  • Meanwhile, in a medium bowl, combine remaining ingredients. Pour on top of chicken. Bake 20-25 minutes.
  • Let stand about 5 minutes before serving.

    You might consider adding spaetzle to the bottom of the dish before adding the rest. I think it would make the dish even more delicious and complete.

    Made this last night and it was a hit! I used sour cream instead of yogurt, fresh spinach that I steamed for a few minutes in the microwave first, and I add mushrooms and some crushed red pepper flakes for flavor. Oh and I love garlic so a bit more garlic too. Came out great and my husband couldn’t stop raving about it! thank you so much for sharing! It will now be a staple on my dinner menus!

    Planning to make this tonight and bought all the ingredients this weekend. Do you think fresh baby spinach would work? And I have sour cream rather than yogurt since that is what I usually use in my spinach/artichoke dip recipe. Will it be as good as yours???

      Oh Kim! I think it will be delicious! I used the lighter greek yogurt to lighten up the recipe a bit, but definitely the sour cream should make it scrumptious!

      Great! I have reduced fat sour cream and low fat mayo…. I may even add some mushrooms to this as I have those in the fridge too. I plan to serve with steamed rice and roasted brussel sprouts! Thanks for sharing this recipe! Love your blog!

    Am making this for dinner tonight. My problem is always trying to figure out what to serve with meals. What do you normally serve with this?

      Hi Sharon,
      I hardly ever serve the same thing with it much, but we loved a crusty garlic bread, roasted carrots, and even a small side salad. Potatoes would also work well as you’ll want something to get all that goodness from the spinach and artichokes! That and the garlic bread work well for that.
