Oven Fried Chicken

Fried chicken is hard to beat as a comfort food. The first bite with a big ole crunch followed by the burst of salty flavor that immediately makes my mouth water. It’s a flavor I sometimes just absolutely crave. This week, probably like most every person I know, I’m off of holiday mode. I’m starting to make up for all of the heavy-laden foods from over the holidays. For two whole months now, my diet has been full of cakes, pies, and rich meals at every turn.

But, even though I’m making up for all of those holiday treats I’ve been eating, my family still loves a meal with tons of flavor. We still enjoy our comfort foods. We just have to bring it back to normal – or better even.

With that plan in mind, I made my oven-fried chicken tonight that is so delicious you honestly won’t miss the more traditional Southern fried chicken. At least we didn’t seem to miss it a bit. I ran a few numbers on this recipe and with my calculations, one serving is seven points on Weight Watchers! Now my friends, I think that pretty awesome for a fried chicken recipe as hearty as this one.

It’s super simple to make. By now, I’m sure y’all have figured out that is my favorite way to cook. The easiest way to get a homemade, delicious, nutritious meal on the table for my family is when I’m in my zone!

First, preheat your oven to 425 degrees and go grab some paprika, thyme, and salt.

You’ll also need a little bit of flour.

Mix those together in a medium sized bowl.

Spray a 9×13 cooking dish with butter-flavored PAM non-stick cooking spray and add one tablespoon of melted butter to your baking dish.

Next, coat both sides of your chicken with the flour mixture and place your chicken into your cooking dish. Place into your preheated oven and bake for 35 minutes on one side, flip and cook another 30 minutes on the other, or until the juices of your chicken run clear when pierced.

It comes out absolutely scrumptious! Crunch, flavorful, juicy, and a perfect alternative to Southern fried chicken any day.

Oven Fried Chicken

Prep Time: 5 minutes

Cook Time: 1 hour

Total Time: 1 hour, 5 minutes

Yield: 6

A simple, easy, healthy recipe for oven-baked chicken.

Ingredients

  • 6 chicken breasts
  • 1/4 cup all-purpose flour
  • 1 teaspoon thyme
  • 2 teaspoons paprika
  • 1 teaspoon salt
  • 1 tablespoon butter, melted

Instructions

  1. Preheat oven to 425 degree Fahrenheit
  2. Mix together flour, thyme, paprika, and salt in a medium bowl.
  3. Spray baking dish with butter flavored non-stick cooking spray.
  4. Pour melted butter into baking dish.
  5. Dredge chicken in flour mixture and place into baking dish.
  6. Bake for 35 minutes, flip and cook an additional 30 minutes or until chicken is fully cooked.

    Robyn, the photos made my mouth WATER! The only thing I’d do differently? I’d still bake it in the baking dish, but I’d put a cooling rack inside the baking dish under the chicken. This allows the heated air to get all the way around, and then you don’t have to flip it half way through! Man, this might just be dinner tonight. I’ve got some chicken breasts hanging out in the fridge that I wasn’t quite sure what to do with yet.
