While I was wringing my hands hoping everything would be fixed any minute, I also spent time cooking up a storm and going on even longer walks than normal.Yes, it was nerve-wracking but y’all were so encouraging with your sweet emails and messages.

So, are y’all ready for a delicious recipe?
When I get stressed or nervous, I turn to comfort foods like banana pudding, macaroni and cheese, and yes, even these onion rings. But don’t fear. I did not have them all in the same day, because – well – I knew I had to have some restraint. That’s when the long walks came in handy!
Here’s how I made them.
Start by peeling and slicing your onions into about 1/4 inch slices. Carefully separate each of the rings within the slice.
Now add peanut oil to your deep fryer, deep skillet, or heavy stockpot. Preheat to a temperature of 360 degrees.
In a large bowl, mix together flour…
salt, cayenne, pepper, and a pinch of sugar…
oil…
an egg…
and buttermilk.
Mix all ingredients together until well-combined.
Carefully drop your onion rings into the batter and drop into your fryer.
Place as many rings as will fit without touching one another as they cook.
Allow to cook until golden brown on one side, flip with tongs and cook on the other.
Remove from the fryer with tongs and place on wire rack or paper to drain. If possible, drain on a brown paper bag as it seems to absorb more of the grease and doesn’t “steam” the onion ring while draining.
Serve warm with your favorite ketchup, mustards, or other sauces.
A simple recipe for crispy onion rings ready in minutes.
Ingredients
- 2 large sweet onions, peeled and sliced about 1/4 thick
- 3/4 cup self-rising flour
- 1 teaspoon salt
- 1 teaspoon pepper
- 1/2 teaspoon cayenne pepper
- 1 pinch sugar
- 1 egg
- 1 cup buttermilk
- peanut or preferred cooking oil for deep frying

- Prepare onions and set aside.
- Preheat deep fryer, deep skillet or heavy-bottomed large stockpot with great to 360 degrees.
- Combine flour, salt, peppers, sugar, egg, and buttermilk until well-combined.
- Dip onion rings into batter and then drop into fryer.
- Allow to cook on both sides until golden brown - about 3-6 minutes.
- Remove from fryer with tongs and allow to drain.
- Serve warm.
