Now that college football is back in full swing, I’m beginning to settle into a few of my favorite recipes to have as part of my tailgate menu this year. We love this creamy and delicious chili cheese dip, my restaurant-style salsa, and of course pimento cheese!

I love that this chili cheese dip is made from scratch and tastes so much better than any rubbery block of cheese I used to use when I was in college ever could! I have a few simple tricks to keep this homemade cheese dip creamy and dreamy and so delicious that I can’t wait for you to try!

The BEST Chili Cheese Dip Recipe

To make this dip, you’ll only need a handful of ingredients. You’ll need:

  • butter
  • all-purpose flour
  • milk
  • cheese
  • salsa
  • sausage

You’ll begin by melting your butter in a medium saucepan set over medium heat. Once the butter has melted, whisk in the flour, one tablespoon at a time until the flour has completely dissolved.

Slowly pour the milk into your butter and flour mixture, whisking constantly. Continue to whisk as your milk mixture thickens. Reduce the heat to medium-low and add your shredded cheese, about 1/2 cup at a time. Whisk until the cheese has melted and creamy before adding more cheese. Repeat until all of the cheese has been incorporated.

Stir in the salsa and sausage until well combined.

Note that the dip will thicken as it cooks.

If your chili cheese dip is thicker than you prefer, add more salsa until it reaches the desired consistency.

Make Ahead Instructions

This cheese dip makes a great make-ahead recipe! Simply prepare it according to the recipe instructions and allow to simmer on the stovetop until ready to serve. If it becomes too thick simmers, add more salsa to the dip to help thin it to your preference.

You can also pour the cheese dip into a slow cooker on the warm setting to serve throughout a party or tailgating.

If you need to make the chili cheese dip even more ahead of time, simply store in the refrigerator and then reheat on the stovetop, in the microwave, or in the slow cooker for serving. The flavors will continue to deepen and become even more delicious!

Ingredients

  • 4 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 1 1/2 cups milk
  • 2 (8-ounce) packages cheddar cheese, shredded
  • 1 cup salsa, or more as needed
  • 1 pound breakfast sausage, browned

Instructions 

  • Melt butter in a medium saucepan set over medium heat. Whisk in flour, one tablespoon at a time, until dissolved into the butter. Gradually pour in the milk, whisking constantly until the mixture is creamy and smooth. Continue to whisk the mixture as it cooks and thickens.
  • Add the cheese, 1/2 cup at a time, whisking constantly, until the cheese has melted completely. Stir in the salsa and the sausage. Serve warm. You can also reduce the heat to a low simmer to keep the dip heated for serving or transfer to a slow cooker on a warm setting to serve warm for a party.
