Looking for a super simple, quick meal that everyone loves?

Well, these chicken nachos definitely fit that bill, as my Daddy would say.

Made with tortilla chips, shredded chicken, beans, queso, salsa, and cheeses, these nachos are packed with flavor. I love to also top them with slices of jalapeno, but you can easily customize with your own favorite toppings. Sour cream and avocados are also absolutely delicious. 

For the chicken, you can use chicken that you’ve cooked in the slow cooker and shredded, chicken that you’ve roasted in the oven, grilled, smoked, or you can shred rotisserie chicken that you pick up from the deli at the grocery store like I did in this recipe. There’s no shame in that game! Ha!

While there is plenty of flavor in these chicken nachos, I like to leave the chicken without a whole lot of spices to it. I guess it the Mama in me, but I like to make sure that even those who aren’t fans of spicy foods will enjoy these nachos since you can customize the toppings to your preferences.

These chicken nachos are on the table in less than 10 minutes, but if you decide to roast your chicken as you are preparing these nachos, just add time for that step as well.

Cook Time: 10 minutes
Total Time: 13 minutes
Servings: 4

Ingredients

  • 2 cups tortilla chips
  • 2 cups chicken breast, cooked and shredded
  • 2 cups queso recipe
  • 1 (10-ounce) can black beans, drained and rinsed
  • salsa recipe

Optional Toppings

Instructions 

  • Preheat oven to 350ยบ F.
  • Layer 1/2 tortilla chips, chicken, queso, and black beans in a large skillet or on a large oven-safe platter. Top with remaining chips, chicken, queso and black beans. Place in oven for 10 minutes.
  • Remove from the oven and top with salsa and preferred toppings.
