Instant Pot “Baked” Potatoes Recipe

Instant Pot “Baked” Potatoes make a quick and easy way to prepare everyone’s favorite baked potatoes! Ready in less than 30 minutes!
Baked potatoes make a delicious and favorite side dish recipe perfect to serve alongside a salad for a light lunch or with a juicy rib eye steak as part of a larger meal. While I love to make baked potatoes in the oven, I’ve found that I can make quick and easy “baked” potatoes in my Instant Pot. They never disappoint with their soft and tender insides!
How to Make “Baked” Potatoes in the Instant Pot
For these amazing Instant Pot potatoes, you’ll only need two things. You’ll need:
- Russet potatoes
- water
We prefer to use Russet potatoes for our baked potatoes since they have such soft and tender insides, making for a perfect baked potato.
Since an Instant Pot requires liquid to develop pressure, the water is a necessary ingredient in this recipe.
I like to use a steam basket or even the trivet with handles for this recipe. You’ll just want something that lifts your potatoes out of the water as they cook.
Once I have my steamer basket or trivet situated into my Instant Pot, I arrange my potatoes. For this recipe, you can easily stack your potatoes inside the Instant Pot. It is perfectly okay for them to be snug inside.
Next, place the lid on the Instant Pot. Close the vent and set the Instant Pot to steam for 10 minutes. Then, allow the pressure to release naturally, about 20 minutes. Open the venting seal to allow any excess pressure to release and then carefully remove the lid to your Instant Pot.
Carefully cut open your baked potato and fluff the inside of the potato using a fork. Add your favorite baked potato toppings. We love butter, sour cream, salt and pepper. A sprinkle of fresh herbs are always delicious, too!

Make Ahead Instructions
Prepare this recipe according to recipe instructions. Allow the baked potatoes to cool completely and then store in the refrigerator in an airtight container for up to 4 days.

Ingredients
- 1 cup water
- 6 Russet potatoes
Instructions
- Place a steamer basket into the Instant Pot and add 1 cup water.
- Scrub potatoes until skins are clean. Place on top of the steamer basket.
- Cover and place vent on lid to “Sealed”.
- Set on “Steam” program and set time for 10 minutes.
- When finished cooking, don't open lid. Allow pressure to release naturally, about 20 minutes.
- Carefully remove lid and serve.

I have never used the “steam” function to make potatoes in my Instant Pot. I always just do the manual setting for about 30 minutes. (Maybe a little longer if the potatoes are very large.) I will have to give it a try using steam.
Dear Robyn, Just had to comment on this. I do not have an Instant Pot. My microwave will cook potatoes (3-4) in 10 minutes. I do not wait 20 minutes to get to them. Love you anyway. I am the girl who has to retro-fit all you self-rising flour for my high altitude. Regards, Anne Hodde
