Growing up, Mama would always make a special batch of cookies for my sister and me for our first day back to school. Her chocolate no bake cookies were our tradition and one that I love to continue on with Little Buddy. This year though, he asked if I would make a special treat the night BEFORE his first day back in the classroom and still make the no bake cookies ON the first day back. That little boy has definitely got it figured out!
So, we celebrated the last day before heading back to school with these chocolate chip blondies. Let me tell you, they are about as simple as it gets! So easy to have mixed up and baking in the oven in no time flat!
Here’s my Chocolate Chip Blondies Recipe. I hope you love them!
- 8 tablespoons (1 stick) unsalted butter, softened
- 1 cup packed brown sugar
- 1 egg
- 2 teaspoons vanilla
- ¼ teaspoon salt
- 1 cup all-purpose flour
- 1 cup chocolate chips
- Preheat oven to 350º F. Spray an 8x8 baking pan with nonstick cooking spray. Set aside.
- Cream together butter and sugar until light and fluffy, about 3 minutes. Add in egg, vanilla, salt, and all-purpose flour. Mix just until well-combined. Stir in chocolate chips. Spread into baking pan.
- Bake 20-25 minutes until set in the middle and lightly golden brown. Cool on a rack until completely cooled before cutting into pieces.
