Growing up, Mama would always make a special batch of cookies for my sister and me for our first day back to school. Her chocolate no bake cookies were our tradition and one that I love to continue on with Little Buddy. This year though, he asked if I would make a special treat the night BEFORE his first day back in the classroom and still make the no bake cookies ON the first day back. That little boy has definitely got it figured out!

So, we celebrated the last day before heading back to school with these chocolate chip blondies. Let me tell you, they are about as simple as it gets! So easy to have mixed up and baking in the oven in no time flat!

This chocolate chip blondies recipe makes a delicious, sweet treat or dessert. Filled with chocolate chips, this simple blondie recipe will become a favorite!

Ingredients
  • 8 tablespoons (1 stick) unsalted butter, softened
  • 1 cup packed brown sugar
  • 1 egg
  • 2 teaspoons vanilla
  • ¼ teaspoon salt
  • 1 cup all-purpose flour
  • 1 cup chocolate chips
Instructions
  1. Preheat oven to 350º F. Spray an 8x8 baking pan with nonstick cooking spray. Set aside.
  2. Cream together butter and sugar until light and fluffy, about 3 minutes. Add in egg, vanilla, salt, and all-purpose flour. Mix just until well-combined. Stir in chocolate chips. Spread into baking pan.
  3. Bake 20-25 minutes until set in the middle and lightly golden brown. Cool on a rack until completely cooled before cutting into pieces.

    I use to make these a lot years ago and called them Congo Bars….I added pecans and/or coconut to them. They were wonderful then as I am sure hey are now!! Might have to whip up a batch of these soon! Thanks for sharing and causing me to recall an old favorite!

    Successfully baked this last weekend n it got bashed up in just few hours… planning to bake again… was so easy preparing… not a mess at all and turned out to be so perfect and tasty!
