Okay, I hope you saved some of that black bean chili from the yesterday.

Because here is what we are going to do with it. We’re making this Frito Chili Pie. Frito Chili Pie is one of those classic recipes that can be thrown together in minutes, if you have all of the ingredients on hand – Fritos, chili, cheese, and sour cream.

It is perfect for a quick-fix weeknight supper and my family loves it when we’re rushing from here to there and just need a quick, hearty, delicious supper.

You start with a layer of Fritos chips on the bottom of an oven safe dish. Then, you layer on the chili and a mixture of cheeses. I like to use a blend of half cheddar cheese, for the flavor, and half Monterey Jack cheese, for the melting, stringy cheese goodness.

Frito Chili Pie makes a classic, quick-fix weeknight supper that the whole family will love!
Prep Time: 5 minutes
Cook Time: 15 minutes
Total Time: 20 minutes
Servings: 6

Ingredients

  • 2 cups Fritos corn chips
  • 3 cups chili
  • 8 ounces cheddar cheese
  • 8 ounces monterey jack cheese
  • Sour cream, optional garnish
  • green onions, optional garnish

Instructions 

  • Preheat oven to 350 degrees.
  • Layer Fritos in the bottom of a baking dish topped with chili and cheeses. Bake for 15 minutes, or until cheese is melted.
  • Remove from oven and serve warm with a dollop of sour cream and topped with green onions.

    I made this dish for my younger sisters when I was baby sitting and they wanted hot dogs , but I made the, with a twist . The recipe is a frito chili pie recipe with hot dogs .
    Ingredients –
    -hot dog weenies
    -variety of cheese
    -frito
    -chili

    Put 3 individual bags of fritos into an oven safe pan and then add chili over it . Top it with a thin layer of cheese . Then add the hot dog and another bag of fritos and another layer of cheese . Put into the oven at 350 degrees for 10-15 minutes .and cool for 5 minutes

    Authentic New Mexican Frito Pie
    You will need
    1lb ground beef
    1 container bueno red chile
    Pinto beans (freshly made or canned)
    1tsp flour
    1tsp minced garlic
    Fritos
    Shredded cheese

    Brown hamburger meat.
    Add 1tsp flour and mix.
    Add bueno red chile, 1 1/2 cups water, 1tsp minced garlic. Mix well. Add cooked pinto beans, canned in fine too. Bring to boil then simmer for 15min.

    Add a small handful of fritos into each persons bowl, add your chile beans, top with cheese, lettuce and onion.
    N there you have it, an authentic new mexican frito pie! So simple and so yummy!

      Yes, this is THE Frito Pie recipe made with Bueno Red Chile! I live in New Mexico and I’ve been making Frito Pies all of my life. We also like chopped tomatoes along with the lettuce and onions.

      You can use whatever chili recipe you prefer. I use my Weeknight Blackbean Chili that is great quick-fix recipe.

      I make it just like my mother did, back in the late 50’s, early 60’s. 2 Cans of Hormel chili with no beans, and cheddar cheese. Amazing!
