Saturday: Extended Family Christmas Party Out

Sunday:  Grandmother’s Chicken and Dumplings (from the Add a Pinch Cookbook)

Monday:  Red Pepper Mushroom Black Bean Soup + Rice + Chewy Sugar Cookies (20 Minutes or Make Ahead)

Tuesday: Easy Barbacoa  + Tortillas + Pico de Gallo + House Salad (Slow Cooker)

Wednesday:General Tso’s Chicken Recipe  + Easy Lo Mein Noodles (30 Minutes)

Thursday: Baked Chicken Parmesan with Homemade Marinara Sauce + Pasta + House Salad (Make Ahead)

Friday: Eat Out

Saturday:
Tonight is an extended family Christmas party out! No cooking for me! 🙂

Sunday:
Grandmother’s Chicken and Dumplings: It’s finally a little cold here in Georgia – we actually just had the most beautiful snow! Once it gets cold, I immediately start thinking about Grandmother’s Chicken and Dumplings! I love to make this treasure on weekends because I like to cook the chicken low and slow. It’s really simple and oh goodness gracious is it ever so worth it!

Monday:
Red Pepper Mushroom Black Bean Soup: We’re having a meatless Monday with this super simple, super tasty soup! You can chop the veggies for the soup earlier in the day and store in the fridge, but this is a quick supper and on the table in minutes!

Tuesday:
Easy Barbacoa: This dish with it’s unmistakeable flavor is always a favorite – and it’s so easy. You can put everything in the slow cooker insert the night before, cover it in your fridge and put in the slow cooker in the morning. We plan to eat it with tortillas, some avocado slices and the pico de gallo. It’s also great in tacos, with rice or on a salad. It is great for leftovers and freezes well too!
Pico de Gallo: I’ve made my pico ahead and it’s in an airtight container in my refrigerator ready to enjoy with supper tonight and on a chip any time we crave it!

Wednesday:
General Tso’s Chicken and Easy Lo Mein: One of my favorite, somewhat spicy takeout foods that I love made at home! It’s so quick and easy, it’s on the table in 30 minutes!

Thursday:
Baked Chicken Parmesan: This delicious dish bakes in a little less than an hour and the prep time is minimal, making this an easy dish for supper. You can shred your mozzarella earlier in the day if you wish to save a little time at supper.
Homemade Marinara Sauce: This is so easy and quick to make, but I love to make it ahead and keep in the refrigerator to grab when I want it. I like making my own, but if you have a store-bought marinara you like, you can use it as well.

Friday: Eat Out or Leftovers
