Maria and Josh of Two Peas and Their Pod are having a baby boy in the next few weeks! So a group of their friends put together a surprise virtual baby shower to help them celebrate the upcoming arrival of the newest pea to their pod.
Maria and Josh are both as sweet as can be and are always cooking up something scrumptious on their blog.
Having met them personally, I can tell you that they are every bit as precious in person as they seem. Sweet, humble, talented, and hilarious to boot! They are without a doubt my kind of people. I just wish they lived a whole lot closer.
I immediately knew I would serve these simple blackberry tartlets if I were lucky enough to be able to host a shower for Maria and Josh in real life. They make the perfect and elegant addition to any shower.
Blackberry tartlets are also as easy as can be to make. You simply use a pre-made phyllo shell, a bit of homemade blackberry curd, a dollop of whipped topping, and then keep them chilled until you are ready to serve.
You can easily substitute the blackberry for another berry such as raspberry, strawberry, or maybe even a blueberry. An assorted tray of a few of those would be pretty sweet, too I think.
A simple recipe for blackberry tartlets perfect for a shower or luncheon. Recipe adapted from Weight Watchers
Ingredients
- 2 (12-ounce) packages frozen blackberries, thawed
- 1/2 cup sugar
- 1/3 cup fresh orange juice
- 1/8 teaspoon salt
- 2 tablespoons cornstarch
- 2 tablespoons water
- 1 1/2 tablespoons butter
- 1/2 teaspoon vanilla extract
- 30 frozen miniature phyllo shells, thawed
- 1 1/4 cups frozen fat-free whipped topping, thawed
- 30 fresh blackberries
Instructions

- Combine first 4 ingredients in a large saucepan.
- Bring to a boil; reduce heat, and simmer uncovered for 5 minutes.
- Strain berry mixture through sieve. Discard solids.
- Pour berry juice back into saucepan.
- Combine cornstarch and water.
- Pour into berry mixture.
- Bring to a boil over medium-high heat, stirring constantly. Cook 1 minute.
- Remove from heat and add butter and vanilla. Cool slightly.
- Spoon 2 teaspoons of berry mixture into each shell.
- Chill 2 hours in refrigerator or approximately 15 minutes in the freezer.
- Top each tartlet with 1 teaspoon whipped topping and a fresh berry.
- Serve immediately or keep chilled until ready to serve.
