This carrot salad is one that you will find yourself making again and again, especially as the weather warms up a bit. It’s crunchy texture mingled with the sweetness is amazing!

So simple and so delicious, it really is one of my favorite salads to throw together for a family gathering or just to keep on hand for a quick side dish for lunch or supper. It is just as great with a sandwich or burger as it is with a chicken or fish. It just works with so much! 

I can’t make this carrot salad without thinking of my father-in-law. Whenever we’ve been together at a restaurant and he sees carrot salad on a menu, you better believe it will be a part of his order. He just loves it and I love that I can always count on him to order it! My husband if fairly similar in his carrot salad loving ways and you better believe that this recipe is one that he devours!

The pineapple and raisins, along with the carrots, add just the right amount of natural sweetness to the carrot salad that you do not need any additional sweetener for this salad. Just a light toss with mayonnaise and it’s ready! You can’t beat that!

For the raisins, you can use whichever color are your favorites. And for the pineapple, you can use fresh or canned, whichever you prefer. Easy peasy.

Ingredients

  • 4 cups shredded carrots
  • 1 cup raisins
  • 1/2 cup finely diced pineapple
  • 1/4 cup mayonnaise , or Greek yogurt

Instructions 

  • Stir together all ingredients until well combined. Serve immediately or store in an airtight container in the refrigerator for up to 3 days.

    I use the same recipe and for an additional layer of flavore I use just a dash of onion powder. Sounds strange but it works.

    Can you use the shredded carrots available at the grocery store or do you need to shred them with a grater at home?
