I can’t make this carrot salad without thinking of my father-in-law. The pineapple and raisins, along with the carrots, add just the right amount of natural sweetness to the carrot salad that you do not need any additional sweetener for this salad. Just a light toss with mayonnaise and it’s ready! You can’t beat that!
For the raisins, you can use whichever color are your favorites. And for the pineapple, you can use fresh or canned, whichever you prefer. Easy peasy.

Carrot Salad Recipe
- 4 cups shredded carrots
- 1 cup raisins
- 1/2 cup finely diced pineapple
- 1/4 cup mayonnaise , or Greek yogurt
- Stir together all ingredients until well combined. Serve immediately or store in an airtight container in the refrigerator for up to 3 days.
