  • 1 3/4 cup self-rising flour
  • 2 cups cottage cheese, or 1 to 1 1/2 cups Greek yogurt
  • 1/2 cup pizza sauce, homemade or store-bought, plus more for serving (optional)
  • 1 cup shredded Mozzarella cheese
  • olive oil, for spritzing or brushing on the outside of the rolls

Instructions 

  • Make the dough. Add the self-rising flour and cottage cheese to a large mixing bowl. Stir together until well combined. If the dough is too stiff, add more cottage cheese. Place the dough on a lightly floured surface and roll into a 1/2-inch thick rectangle.
  • Add the toppings. Leaving a 1/2-inch border around the ends of the dough, spread the pizza sauce onto the rolled dough and top with the Mozzarella cheese. Add any additional toppings preferred.
  • Roll the dough. Cut the dough with a pizza cutter into 8 individual strips. Roll the dough strips.
  • Air Fry. Place 4 pizza rolls at a time into the air fryer basket lined with parchment paper. Spritz or brush with olive oil. Air fry at 400º F for 5 minutes, turn, and air fry an additional 5 to 6 minutes until they are golden brown.
  • Serve. Remove from the air fryer and serve immediately. Delicious served with additional pizza sauce!
