This Southern Potato Salad recipe is a delicious side perfect for casual suppers and cookouts! Potato salad is an easy make ahead favorite!

This potato salad recipe is a simple, classic side dish that’s so easy to make. It is a favorite year round – from summer cookouts to potlucks to a southern Sunday meal. Potato Salad goes so well with everything from hamburgers and chicken to other side dishes like fried okra and baked beans.

When I was a girl I loved being the taste tester when Mama made her potato salad. What a lucky job it was because her Southern Potato Salad is the best! She was asked to make it for every cookout or family reunion because everyone loved it. And my family requested it for so many suppers and family gatherings too. So I got to test it a lot.

Southern Potato Salad Recipe

This potato salad recipe has been in my family for so many years. My great grandmother made it by this recipe and passed it down through the generations. Mama taught my sister and me how to make it and it’s always been our go-to recipe.

Best Potatoes for Southern Potato Salad

You need to use starchy potatoes that get a little bit soft when you cook them. I prefer Russet or Yukon Gold potatoes, but I most often use Russets. A waxy potato won’t do for this southern favorite, so get one that will get somewhat soft.

How to Make Potato Salad

To make this recipe you will need these ingredients.

Southern Potato Salad Ingredients

  • Potatoes (Russets preferably)
  • Eggs
  • Onion
  • Dill Pickles
  • Yellow Mustard
  • Mayonnaise (not the sweet dressing type)
  • Salt

Cook potatoes. Start by scrubbing and peeling 3 pounds of potatoes. Cube them, add to cold water and boil until tender enough to pierce with a fork, but not until they are mushy. Drain well once they are done.

Boil eggs. At the same time, hard boil 6 eggs and then peel them once they’re done. Chop the eggs in preparation for the salad.

Dice onion and pickles. While the potatoes are boiling, dice your onion and dill pickles.

Combine. Stir together the drained potatoes, chopped eggs, diced onion, diced pickles and salt with the mayonnaise and mustard until creamy. Add more mustard, mayo and even pickles to taste.

Taste test. Make sure your tasting spoons are lined up and at the ready. You will want to have them for your own taste tests!

Once you’ve completed your potato salad, you can either serve right away or refrigerate to serve later.

Make Ahead Favorite

My family’s Southern Potato Salad recipe is one that is delicious made the day of serving, but is a great make-ahead dish as well. Just keep it tightly covered and refrigerated until ready to serve. It will keep in the refrigerator for up to 3 days.

You’ll find this dish served at most family get-togethers in my family – from holidays like Easter alongside my Cola-Glazed Ham to reunions to cookouts to Sunday suppers! It’s a great potluck dish anytime, too. Potato salad is delicious with chicken, beef, and pork and is a dish that everyone in my family loves!

Southern Potato Salad – Potato salad is a classic recipe perfect for every possible summer celebration! Made with potatoes, pickles, onions, and eggs, this potato salad is an all-time favorite!


  • 3 pounds boiled potatoes peeled and cubed
  • 6 boiled eggs chopped
  • 1 medium onion diced
  • 4 medium dill pickles diced
  • 1 cup mayonnaise
  • 1/2 cup yellow mustard
  • 1/4 teaspoon salt


  • Combine all ingredients together and mix until well-combined and creamy. Add more mayonnaise and mustard depending on tastes.



Store potato salad in an airtight container in the refrigerator for up to 3 days.

  1. My daughter and my youngest son always “taste test” my potato salad too. Sometimes it honestly starts tasting the same to me and I can’t tell if it needs anything more. There’s nothing like a good taste tester! Once I accidentally took the red pepper instead of paprika and liberally sprinkled it over the top! Instead of being terrible like I feared, we really liked it! I always let my testers add red pepper to our potato salad after that. Thanks for the recipe, it sounds great!

  8. Oh my! I love the sight of that bright yellow potato salad!! After I left home for college, I thought my family was the only one in the world who made it with liberal amounts of yellow mustard and a sprinkling of paprika 😀 So glad to see others enjoy it this way as well. And I totally agree, you can’t call it potato salad unless it has that atomic yellow look and sour bite! This recipe made me think of my dear grandfather and how much he loved potato salad. It was a holiday staple for us.

  10. Very similar to the southern potato salad I grew up with. It had sweet pickles instead of dill, and also had celery. We used to whip our potatoes until they were like mashed potatoes (very smooth and creamy) and then add the other ingrediants. And you NEVER EVER ate potato salad hot! We always let it sit overnight so the flavors would blend. Delicious!!!

  15. This is almost like my Mom’s & Grandma’s except we put in diced tomatoes; however this was a good mistake. When my Mom was visiting her Mom in West Virginia she was helping with the potato salad. When Mom put in the tomatoes, Grandma asked her what she was doing. Grandma said I don’t put tomatoes in mine & Mom of course started arguing with her. Grandma told her She always put PIMIENTOS in it!!! We love the tomato version.

  16. Do you boil the potatoes whole and then cut them up? Or cube them, then boil? I have a problem getting them to the perfect consistency to where they’re cooked, but not mushy.

    I use my G’MOTHER ‘s recipe & she put chopped celery & green onions so naturally I do the same.Red onions r added for their sweet flavor ,and
    If new potatoes r available I use them but generally use red.

    For a little variance, try adding a chopped (peeled) apple – Gala, Honeycrisp, etc. Some slightly sweet crunch. And, I leave out the pickles sometimes… depends on your taste.

  20. When I lived in the South and “had” to make potato salad, we didn’t use quite so many eggs. We also used pickle relish instead of plain old pickles, but I’m betting the plain old pickles would be just as good if not better! We also used Duke’s Mayonnaise as it’s about the best Mayo out there, too bad I can’t get it where I live now. :o( Since I saw your recipe, I can’t wait to make some Potato Salad now!! LOL

  21. This is exactly like my family makes it. We live in the West now, but all the family is from the South. When I saw it was the perfect yellow I knew it must be like ours, when we go to potluck we avoid tater salad that isn’t yellow enough, lol.

  24. Love potato salad!! I make my southern Granny’s recipe which is similar to this one, but no onions, add dill pickle juice if needed, and chopped green Olives. Yes, olives! My family and friends love it!!

  25. This is basically the same recipe for Potato Salad my mother made! Grew up in Texas. The only difference was that my mother put in celery, sweet pickles, little bit of the sweet pickle juice. I preferred dill pickles, which I used when I made it. Always loved the mayonnaise and mustard mixed together. It is very difficult for me to eat other potato salad that does not have mustard in it.

    1. Not in my family and I am as southern as you can get. I do not put mustard in my potato salad and I use sweet pickles and celery. I think we call this mustard potato salad.

  27. Does anyone know what the little bits of (looks like tomato) are called? My grandma would put them in the salad for a little more flavor. They come in a very little jar. Not sure what they’re called though.

    My husband is from South Carolina, and I am a born and raised Jersey girl. Traditionally, I use my mother’s recipe (potatoes, mayo, white vinegar, fresh parsley, boiled eggs, onion, paprika, salt and pepper) but today my husband asked me to make it “Southern Style.” I used your recipe, and I wish you could have seen his face when he tasted it! He was so happy, and said it tasted just like his grandmother’s. So thank you for helping me make a happy husband!

  33. Thank you for sharing this recipe, my potato salad tends to come out very watery and bland after I have covered and placed in the refrigerator overnight and I don’t know why? How long should I wait after the potatoes has drained to add all the ingredients. I was using relish in the past, therefore I’m going to try the Dill pickles are these sweet?

    Your recipe is exactly the way, I make mine. I use Dill relish, unless I am out of it, then I use dill pickles and I add Black Pepper. I make mine just like my Mom used to make, except she used Miracle Whip. I haven’t like Miracle Whip for years and always prefer Real Mayo. You always have Great Recipes!

  37. I make mine with miracle whip and yellow mustard, onion and eggs. I guess it is the northern style. Been making it since I was 14. We are not pickle eaters. Every holiday but Thanksgiving I make potato salad. Parties for other people ask me to make it. My sister’s boyfriend could eat a platter of 24 deviled eggs himself. I love my friends and family.

  39. I make my potato salad the same way. I use sweet pickle relish though….just a personal preference.. And add in some diced pimento if I have it for color. I love a good potato salad. Oh and sometimes will add diced celery if I have it.

To my salad, I always add diced green bell pepper along with the onion and sweet pickle relish but I don’t do the mustard. I garnish my dish with paprika and sometimes olives. My dish always stands out because of the green pepper.

    Same recipe as mine. BUT I put mayo, mustard, and pickle juice in a container & mix until smooth then add it to the rest of the salad. Makes it so everything doesn’t break down my mixing it.

  45. I do exact same thing, potatoes, onions, pickles, mayo, mustard, eggs, salt pepper, and i add some powdered hidden valley ranch dressing, and sprinkle paprika and dill on top.

  52. This is very similar to my mother’s recipe, except she mashed the potatoes and served it warm the 1st time, then cold for leftovers.  And she used about half of the mustard called for.
    And she mixed everything but the potatoes 1st, then added them last.  I just made this with cooled potato chunks, and the minute the condiments were mixed, I knew this was my mom’s recipe in her head.  I just had a flashback of her making potato salad for holiday and special occasions, and how I miss that sweet lady.  Thanks for reminding me.

    I also added 1/2 stalk of finely chopped celery. Backed off a bit on the amount of mustard, our family prefers the Vlasic Sweet Salad Pickles and I used Red potatoes… it was a true hit at our southern family reunion! Thank you!

    When I was a teenager my best friends mother made her potato salad this way with dill pickles instead of sweet relish. This was back in the 1960’s and brings back so many wonderful memories. Any relations to Sue and Wilbur Horn??

  61. The ‘recipe’ for our potato salad was in Mom’s head too. Very similar to this. We grew up on Miracle Whip and still don’t care for mayo so Miracle Whip and yellow mustard base. After I left home it was ‘by guess and by golly’ until I got it right. It really still is as I don’t measure anything and go by taste and how big of a dish I want to make. Mom used a bit of sweet pickle juice in hers. I use a tiny bit of sugar on the end of a spoon. DH is the designated tester here. He could eat potato salad every week I think. 😉

    This is just like my mom used to make and is how I now make it. I will usually eat potato salad only if either of us has made it. I can even eat it by itself as a snack or in a slice of bread as a sandwich. I usually leave out the raw onion though and add celery salt and dill weed. Super recipe!!

    Minor sidenote…I was curious abt the salt, so I added up all the salt ingredients…or most and got 6400mg, so 550mg/serving. I don’t know your exact products, but just a mention. I love potato salad and have to eat less salt…I guess those two aren’t compatible. :/

    1. Thanks, Abby. My nutrition program calculated the amount of sodium at 330 mg per serving. It all depends on the brands of ingredients you use. I understand people may need to eat less sodium but there are some brands that contain less sodium than others. Maybe give thos a try so you can still enjoy the foods you love.

  68. Having been raised in the Deep South this is the recipe I remember made from both my Grandmother’s and my Mom. So with that being said this is how I make mine, too. Well, with the exception of adding a rib or two of celery in it and I don’t use as much mustard as what is called for in this recipe. My husband absolutely loves my potato salad & even ask me where I learned to make it?! His Mother never made potato salad & when I do make potato salad I better make a lot – he eats it with meal (2 heaping helpings) plus as a snack later on. I don’t make it often but realize I sure miss it when finally making it.
