Saturday: Family Night Out
Sunday: Citrus Shrimp + House Salad (from the Add a Pinch Cookbook)
Monday: One Pan Pesto Chicken (30 Minute Meal)
Tuesday: Fish Tacos with Homemade Taco Seasoning + Cilantro Lime Rice + Restaurant Style Salsa +Skillet Brownie S’Mores (30 Minutes)
Wednesday: Leftovers or Eat Out
Thursday: Sheet Pan Teriyaki Salmon with Green Beans (30 Minutes)
Friday: Skillet Lasagna (from the Add a Pinch Cookbook) + House Salad (30 Minutes)
MEAL PLAN TIPS:
Sunday:
Citrus Shrimp: This shrimp recipe from the cookbook comes together in a snap and is perfect for an easy, breezy meal. Paired with a salad and homemade citrus vinaigrette dressing it is simple, scrumptious, and just right! I’ll make the vinaigrette ahead earlier in the day and always love to have a large salad assembled for my family throughout the week.
Monday:
One Pan Pesto Chicken: Another quick-fix supper recipe, this one-pan dish is a favorite!
Tuesday:
Fish Tacos with Homemade Taco Seasoning: I keep the Taco Seasoning made and stored in an airtight container. Even though these tacos are ready in less than 30 minutes, I love to go ahead and prep all of the veggies and the pico de gallo ahead of time to make these fish tacos even easier! You can also go ahead and mix together your sour cream and sriracha and store in the refrigerator for up to a week.
Thursday:
Sheet Pan Teriyaki Salmon with Green Beans: This is definitely an easy go-to recipe for busy weeknights! If you want to prep ahead, go ahead and make your homemade teriyaki sauce and store in the refrigerator. You can also prep your green beans so that then, you just have to assemble ingredients on your sheet pan, bake it in the oven and supper’s ready!
Friday:
Skillet Lasagna: It’s a busy week, so I know that when I’m craving lasagna, and I’m short on time, this is a dish my family and I both love! It’s one of my regulars I make from my cookbook – and I’ve heard many of you enjoy it too because it’s on the table in less than 30 minutes and it’s super delicious!
