This turkey salad makes one of my favorite ways to use up and enjoy all those turkey leftovers from yesterday. It really does make for a quick-fix meal perfect for making the most of your roasted or smoked turkey.
Since it has definitely has a different taste from just reheating the turkey leftovers, it really helps you to not feel like you have a never ending supply of turkey that you’ll never make it through. Well, at least it does for me. If you are like my family, you may even look forward to having those leftovers just so you can make this turkey salad.
Enjoy it with crackers or pile it high on a toasted croissant for the ultimate turkey salad sandwich and I think you’ll fall in love with it, too.
Here’s my turkey salad recipe. Give it a try, make it your own, and gobble up all that turkey in your refrigerator in style.
- 2½ cups cubed cooked turkey
- 1 cup chopped celery
- 1 cup halved red grapes
- ½ cup roasted pecans
- 1 cup mayonnaise
- 1 dash lemon juice
- 1 teaspoon Kosher salt
- ½ cup whipped heavy cream
- MIx together turkey, celery, grapes, pecans, mayonnaise, lemon juice and salt until well-combined in a medium mixing bowl. Fold in whipped heavy cream and serve cold.
As a sandwich: Serve in a toasted croissant.
