There are a few salad dressings that absolutely make a salad. Take caesar salad for example. I remember during a trip into Atlanta when I was in elementary school, Mama took my sister and me to a restaurant for lunch. The restaurant’s house salad was a Caesar salad that they served as soon as you were seated at your table. 

As a bright eyed, sassy little thing, I looked up at the waitress and said, “May I please have ranch dressing with my salad?”

Have mercy.

The sweet waitress just looked at me with a smile and said, “Honey, if you try that salad as is and do not like it, I promise I’ll bring you whatever dressing you want.” Needless to say, I didn’t need to ask her for another dressing after all. Ha ha!

That made a very memorable moment in my Caesar salad and Caesar dressing evolution!

Now, I prefer to make my own Caesar dressing at home. It only takes a jiffy and I know every one of the handful of ingredients that I use for it.

Seriously, it has to be one of the fastest dressing recipes in my arsenal and one that I turn to time and time again. This recipe does not use raw eggs, making it last longer in the refrigerator and safe for those with egg sensitivities to still be able to enjoy!

I’ve also included the option to use Greek yogurt in place of mayonnaise in my recipe. I recommend that you use whichever mayonnaise or Greek yogurt you prefer to eat.

Ingredients

  • 2 tablespoons lemon juice
  • 1 clove garlic minced
  • 1 teaspoon Worcestershire sauce
  • 1 1/2 teaspoons anchovy paste
  • 1 1/2 teaspoons Dijon mustard
  • 1 cup mayonnaise or Greek yogurt
  • 1/2 cup finely grated Parmesan cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper

Instructions

  • Whisk lemon juice, garlic, Worcestershire sauce, anchovy paste and Dijon mustard until well-combined. Add in mayonnaise (or Greek yogurt) and whisk until creamy. Stir in parmesan cheese, salt and pepper.

    1. I’m so glad you enjoyed the cake! Love how you topped it for Easter! Such a cute idea! For the anchovy paste, I’ve found it in my local grocery stores on the aisle with the tuna. I will say that it moved a few times in the past and I had to ask customer service to help me locate it. xo

    1. Hi Betsy,
      You can substitute with an anchovy fillet that has been blended (to make your own paste) if for some reason you can’t find the anchovy paste. You can also omit if you don’t have either on hand at the moment. The anchovy definitely deepens the flavor of the dressing. I highly recommend it when you can!

  2. Robyn, I LOVE Caesar dressing! Thank you so much for sharing this one. I try to stay away from GMOs and making this at home, is the perfect way to do so! I’ll probably pass on the anchovy paste, but I’m definitely going to make your dressing because I too, love Caesar salads.

  4. This is very tasty. I used 1/2 cup each mayo and yogurt instead of a full cup. I’m watching my husband scrape the salad bowl with his fingers so he must like it!

  5. I used slightly less than 1 cup of yogurt and 2 anchovy fillets instead of paste (not a fan of paste) and blended in my Ninja. Awesome and super easy!

  6. I’ve never made Caesar dressing, what does the anchovy paste do for the dressing? Would I be missing it if I left it out?

    1. Hi Marisa,
      You can omit if you prefer. It does add a depth of flavor and richness to the dressing similar to what you’ll find in restaurants that make their own dressings in-house. I hope you enjoy it!

  7. Everyone in our house loves the homemade Caesar dressing. I’d like to make a larger amount to keep on hand. How long will it keep in the refrigerator ?

    1. Hi Connie,
      Some different brands of Worcestershire sauce and anchovy paste can have more sodium in them than others. That could be the case if your dressing was too salty for your tastes. If you use the same brand ingredients next time you make it, you could taste of it before adding the salt and if it’s salty enough for you, then leave out the 1/4 teaspoon salt – or reduce it a bit. Thanks!

  11. Perfection! Absolutely the best Caesar dressing I have ever had in my life! I love how quickly it comes together and can be served immediately as well as the freshness and intense flavor.

  12. I did not put in the anchovy paste, just salt. I used the lemon juice but also added a splash of Lemon balsamic to make it more punchy. I made salty proscuitto bits, fried crisp, to put on the salad. I will let people add cheese….some are not big dairy eaters. I used the mayo but added oil as we are grilling the lettuce on a bbq and so want it thinner to spread on the lettuce as it grills. It tastes super!

This is my go to Caesar salad dressing.  So easy and tasty.  Every time I bring it somewhere they want the recipe.  I will admit I have only made it with mayonnaise so far.  Thinking that it would be healthier for you I will be trying it with Greek yogurt next time….if I remember to buy some at the store!

  14. For the Greek yogurt could you use one with honey in it,(we love the flavour of that yogurt) my husband is not a fan of mayonnaise. Thanks

  15. This is the best Caesar dressing we have ever had,I went with 1/2 cup of each mayonnaise and plain Greek yogurt. If I could give it more than 5 stars I would. We enjoyed it so much I’ll never use any other,makes up really fast.Thankyou 😍🥰😘🤪🤗👍🏻😃💋

  17. Thank you for sharing the recipe! My kids loved Caesar dressing and buying a decent one was breaking the bank, so I wanted to make one myself. Once I mixed the mayonnaise with Greek yogurt until it reaches our family liking, my kids never asked for their branded Caesar dressing again 🙂
