A while back, I shared my favorite homemade caesar dressing recipe. Since then, I’ve gotten a few emails asking for my favorite caesar salad recipe – especially for chicken caesar salad. Well, it just so happens that I have a fairly quick and easy one that I think y’all are going to adore as much as we do!

To make it, I start by marinating a few boneless, skinless chicken breasts in a bit of my caesar dressing. To do this, I simply place my chicken into a plate and spread then with a thin layer of the caesar dressing.

Then, I tightly wrap them with wrap and place in the refrigerator for at least an hour to overnight. Generally, this is something you can do in the morning before you head out the door so that when you arrive back home, your chicken is waiting for you! The most time this whole recipe takes is for the chicken to marinate before cooking, but boy is it worth it!

To cook the chicken, you can either grill or slice and toss into a skillet brown on the cooktop and then into the oven to finish cooking. Once it has cooked through, I like to add a bit of freshly ground black pepper to my chicken. Remove the chicken from the heat and allow it cool as you prepare your salad.

Meanwhile, you can prepare your croutons. For croutons, I love to use sourdough, French or Italian bread, but any will do. To make them, I like to drizzle olive oil into a large skillet over medium-low heat and then add a clove of garlic for flavor. Once the oil begins to shimmer, I then toss in bread that I’ve cubed. Once the cubes are well coated with the olive oil, I remove the garlic clove, add a pinch of salt and pepper and place the skillet into a 425 degree oven until the bread cubes are lightly toasted, about 5 minutes. Remove the bread from the oven and allow it to cool.

Add your chicken and croutons to chopped romaine and shaved parmesan and then toss with a bit of that caesar dressing or serve with the dressing on the side. Either way, it is absolutely delicious!

Easy Chicken Caesar Salad Recipe

This Chicken Caesar Salad recipe makes an easy salad recipe perfect for lunch or supper!

Ingredients  

For the chicken:

  • 4 boneless, skinless chicken breasts
  • 4 tablespoons caesar dressing
  • 1 tablespoon olive oil
  • 1/2 teaspoon freshly ground black pepper

For the croutons:

  • 1 small loaf sourdough , French or Italian bread, cubed
  • olive oil
  • 1 clove garlic
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper

For the caesar salad:

  • 4 heads hearts of romaine lettuce torn into bite sized pieces
  • shaved parmesan
  • Caesar Dressing for serving

Instructions 

For the chicken:

  • Add chicken to a plate and spread with caesar dressing. Wrap well with wrap and store in the refrigerator one hour to overnight.
  • When ready to cook, preheat oven to 425º F, remove wrap, and drizzle olive oil into a medium skillet over medium heat. Once oil begins to shimmer, add chicken and brown on both sides. Place in oven and bake until it registers 165º F when checked with an internal thermometer and the juices run clear when pricked with a sharp knife. Remove from oven, sprinkle with pepper and allow to rest about 5 minutes before slicing.

For the croutons:

  • Preheat oven to 425º F. Drizzle olive oil into a large skillet over medium-low heat and then add garlic. Once the oil begins to shimmer, toss in bread cubes. Once the cubes are well coated with the olive oil, remove garlic clove, add a pinch of salt and pepper and place the skillet into a 425 degree oven until the bread cubes are lightly toasted, about 5 minutes. Remove from the oven and allow it to cool.

For the salad:

  • Add lettuce to a large bowl or individual salad bowls. Top with chicken, croutons, shaved parmesan and serve with Caesar dressing. Alternately, add lettuce and chicken to a large bowl. Drizzle with Caesar dressing and toss to coat. Top with croutons and shaved Parmesan and serve.
