Homemade Potato Skins Recipe – Potato skins make an easy and delicious recipe perfect for parties or game day!
I’ve discovered over the years that no matter the occasion, a tray of potato skins is always welcome!
Regardless if it is for our get together watching the game on the weekend, for that special party for the Super Bowl, tailgating at the races or just because, this is one of those easy as can be recipes that you can depend on being devoured.
While we were on our trip to Alaska, we stopped into a restaurant in Juneau for lunch. After spending most of the morning walking around the downtown area sightseeing, we were starving and knew we needed to eat a good lunch before we headed off to see the Alaskan husky summer dog camp! (So fun, by the way!)
The first thing I spotted on the menu at the Red Dog Saloon was their potato skins and they sounded just like what I wanted! Can you believe, here we are in the middle of salmon country and I’m ordering potato skins? They definitely didn’t disappoint!
When we returned home, I decided to head into the kitchen and make a batch. They seriously are always welcome!
To make them, I begin with potatoes that I’ve either cooked in the slow cooker or baked potatoes that I’ve baked in the oven. I then split them in half and scrape the insides out into a bowl to save and use for another recipe. Then, I drizzle the insides of the potatoes with olive oil and sprinkle them with salt and a bit of freshly ground black pepper.
This is the point that I broil them on both sides to make them super crispy and then fill with cheese and the other toppings and return to the oven until the cheese has melted and is bubbly.
I like to keep the ingredients simple and ones that I know everyone will enjoy. Of course, you can add diced green onions, chives, and a dollop of sour cream for a loaded potato skin if you’d like. I loved that at the Red Dog Saloon they served them loaded with salsa and a big dollop of guacamole! Yum!
But, whatever you do, be sure to make extras because they go like hotcakes!
For easy entertaining, you can make your potato skins ahead of time, saving the final heating until you are ready to serve them. Just keep them tightly covered in the refrigerator until ready for the final heating for serving. They should keep in the refrigerator up to 3-5 days without any issues.
Here’s my potato skins recipe. I think you’ll love them.
Potato Skins
Ingredients
- 6 baked potatoes
- olive oil
- salt and pepper, to taste
- 12 ounces cheddar cheese, shredded (or favorite cheese blend)
- 6 slices cooked bacon, crumbled
Other Toppings:
- Sour Cream
- Chives
- Guacamole
- Pico de Gallo
- Salsa
Instructions
- Preheat oven to 400ยบ F.
- Split baked potatoes in half and scoop out center of potato.
- Drizzle olive oil over the baked potato half and place on baking sheet, skin side up. Sprinkle with salt and pepper.
- Place in oven for approximately 5 minutes, remove from oven and flip, sprinkle with additional salt and pepper. Broil for another 5 minutes.
- Remove from oven and fill hollowed interior with shredded cheese and top with bacon crumbles.
- Return to oven for approximately 5 minutes or until cheese has melted and is bubbly. Serve warm with your favorite toppings.

I’m a potato skin lover. I cut the spuds in half lengthwise and deep fry them until slightly browned. I place them on a baking pan then add seasoning of salt, pepper, and garlic powder. I top with cheese and bacon bits and bake in an oven for about 10 minutes at 350 degrees and cheese has melted. Then it’s time to go crazy with sour cream and diced green onion. Oh my! Gotta go! I’m hungry and feeling the urge for a delicious tater. Bye bye!

We love Potato Skins and make them 2 or 3 times a year. We cut each half in half, lengthwise. Then we deep fry them until crispy and brown. MmmmmMMMMMM!!!!
Potato skins are so delicious! I like mine too with gobs or sour cream or plain greek yogurt.
