How to Make Chicken Fajita Nachos
This quick and delicious recipe is on the table in well under 30 minutes for a dinner everyone enjoys.
Everything is cooked in the same skillet for really easy cleanup, too. That makes this a definite win-win weeknight meal in my book.
Here’s how you’ll make it.
Ingredients
- olive oil – I use extra virgin olive oil
- chicken – use skinless, boneless breasts sliced into 1/2-inch strips or tenderloins
- onion – medium size, cut into strips
- peppers – use your choice or a mixture of green, red, or yellow, cut into strips
- taco seasoning mix
- tortilla chips
- Monterey Jack cheese – shredded
- salsa
Step-by-Step Instructions
Cook the chicken. Add olive oil to a preheated skillet. Sprinkle the chicken with the taco seasoning and cook the chicken slices until cooked through and lightly browned. Once done, move the chicken to a bowl.
Cook the peppers and onions. Place the pepper and onion slices in the skillet and sprinkle with taco seasoning. Saute until they are slightly tender. Remove to the same bowl as the chicken once done. Turn off the heat to the skillet.
Arrange the nachos. Layer the tortilla chips to the bottom and up the sides of the skillet. Then layer on my the cooked chicken, peppers, and onions. Add the shredded cheese over top of the other ingredients.
Place in oven. Then put the skillet in the oven under the broiler for a few minutes to allow the cheese to melt and get all bubbly. Remove the nachos from the oven once the cheese is bubbly.
Serve the nachos. Top the nachos with salsa. Serve and enjoy!
Make Ahead and Storage Instructions
These chicken fajita nachos taste amazing when hot and fresh! You can save a little time by prepping some of the ingredients ahead of time. As far as making ahead, chicken is all that should be cooked ahead for the best results.
To meal prep. Chop and slice ingredients as needed, shred the cheese, and make the salsa and taco seasoning recipes as needed. Store all the prepped toppings as needed in airtight containers in the refrigerator.
To make ahead. Prepare the chicken as instructed. Allow to cool and store in an airtight container in the refrigerator for up to 2 days. When ready to make the nachos, heat the chicken in the skillet and proceed with cooking the peppers and onions as directed, and continue with the remaining recipe instructions.

Chicken Fajita Nachos Recipe
Ingredients
- olive oil
- 3 boneless skinless chicken breasts, sliced into 1/2-inch strips or 12 chicken tenderloins
- 1 medium onion, cut into strips
- 1 medium bell pepper, green, red, or yellow, cut into strips
- 1/2 teaspoon taco seasoning mix
- tortilla chips
- 1 cup grated monterey jack cheese
- 1/2 cup salsa
Instructions
- Preheat oven to broil at 500º F.
- Drizzle olive oil into a skillet over medium heat. Add chicken strips to the skillet and sprinkle with half of the taco seasoning. Cook until cooked throughout, about 5-10 minutes. Remove chicken from skillet and into a bowl. Set aside. Add onions and peppers to skillet, sprinkle with remaining taco seasoning and cook until slightly tender, about 3 minutes. Remove from skillet and add to the bowl along with the chicken. Turn off the heat to the skillet.
- Arrange tortilla chips in a layer on the bottom and up the sides of the skillet. Add cooked chicken, onions, and peppers to the top of the tortilla chips. Top with cheese and place into the preheated oven. Broil until cheese has melted and turned slightly bubbly. Remove from oven and top with salsa. Serve immediately.

On the chicken nachos, what about with left over chicken already cooked
Mary, you can certainly use chicken that is already cooked. I do that a lot. Just add olive oil to your skillet, then start with Step 2 in instructions where you add the onions, peppers, and taco seasoning to skillet and follow the remainder of the instructions of the recipe. Hope you enjoy!
When do you use the taco seasoning mix? It isn’t mentioned in the directions, but is listed in your ingredients. I am guessing you sprinkle it on the chicken while it is cooking? Thanks for all the yummy recipes!
