MEAL PLAN TIPS:
Saturday:
Shrimp Scampi: You can replace the traditional pasta in this scampi with my favorite olive oil and garlic zucchini noodles if youโd like! It is a definite favorite!
Sunday:
Sunday Roasted Chicken: So delicious for a great Sunday supper! It’s a recipe we loved eating at my Grandmother’s house and I’ve shared it in my cookbook. It’s just perfect with my Green Beans with New Potatoes that are also in the cookbook. This meal takes a bit longer than my weeknight choices, but I enjoy making a meal like this for Sunday supper. Plus, this will not only be a scrumptious supper tonight, but I’ve already got plans for a Leftover Makeover for Monday’s supper too!
Monday:
Chicken Salad with Grapes: One of my husband’s all-time favorites! I am using roasted chicken left from Sunday’s supper for this easy and delicious dish!
Tuesday:
Taco Soup: Taco Tuesday is surely tasty with this soup! It’s hearty and so simple to make! It’s one the table in less than 30 minutes with the stove method, but I’ve also shared how to make it in the Slow Cooker as well! Just pair with your favorite tortilla chips and my Restaurant Style Salsa (that’s ready in just a few minutes) for a supper everyone loves!
Talk about easy AND delicious!
Wednesday:
Parmesan Crusted Salmon: A definite staple in my house! To make prep go even faster, go ahead and grate your Parmesan cheese and chop your parsley. Store them in separate airtight containers in the refrigerator and just grab and use when cooking.
House Salad: I generally like to make a huge salad earlier in the week which helps make weeknights even easier!
Thursday:
Skillet Lasagna: This is one of the dishes from the cookbook that my family just loves! I have to tell you it is one that I turn to when we are craving lasagna without the time to put together a whole pan of it. I love that this is ready and on the table in less than 30 minutes!
Have a great week!
