And oh mercy, it’s amazing!
And so easy! You know I love quick and delicious recipes for those busy weeknights. This Mexican Street Corn is perfect in the air fryer and I’ve been making it like crazy! It’s ready in 15 minutes, my family loves it! Such a winner all around.
Here’s how I make it.
I start with cleaned, fresh corn on the cob. I just pop my corn on the cob into my air fryer basket and cook for 10 minutes at 390 degrees.
Then, I sprinkle the cheese onto my corn and cook for 5 more minutes.
Once done, I remove from the air fryer, top with chili powder and Stone House Seasoning, along with fresh cilantro. I serve with fresh lime wedges.
Now, you may know that traditional Mexican Street Corn also has a thick coating of mayonnaise on the corn. You can definite add that if you’d like, I just wanted to reduce the unnecessary calories and fat from this recipe. If you want to add, I would rub each ear of corn with 1/4 cup of mayonnaise before sprinkling with the cheese and cooking for the final five minutes. I promise you though, we don’t miss it!
Do you have an air fryer yet? Well, I could kick myself square in the pants. That’s a vision I’m sure, but here’s why.
Bart’s parents have been singing the praises of their air fryer for over 2 years. They love everything from biscuits to turkey breasts cooked in theirs and have been telling me for years that I needed to one. I was a little slow to really try my air fryer, but since I started using mine last fall, I’ve been hooked!
I’ve been testing and testing recipes in my air fryer and I’ve got many more to share with you!
